Tapioca is always in the starch or flour. It seemed to be in everything gluten-free almost. My wife is diabetic tapioca makes blood sugar skyrocket. My granddaughter has celiac. All that we need is a good gluten-free tortilla without any tapioca🥺

most gluten free flours mixes are very high in starches . tapioca , corn , rice ....they all make blood sugar spike. you can look into low carb gluten free recipes .
