Do I have to use a different ratio if I'm using dry yeast? Instead of live yeast?

use 1/3rd of the amount of dry to fresh. So if he uses 10 grams of fresh, use approx 3 grams of dry.

Please help me know the recipe for making only 3 or 4 dough balls. We have a family of 3 and sometimes 4 when my son is home from college. Thank you so much!

Can this flour be substituted for other types of recipes (banana bread, brownies etc.)? Also, is there a cookbook for this wonderful flour? I’ve made pizza, Italian bread and rolls and this flour is amazing.

I don’t have a pizza oven so I have to use my conventional oven at 550 degrees. I bake one crust after 12 hours and it’s great! The rest of the dough balls I freeze but they come out tough. What can I do?

Hello sir, when you cook the pizza GF did you have any extra precautions to avoid flour getting in contact inside the oven? thanks

The pizza oven floor is between 720 and 960 degrees. Gluten crumbs remaining on the floor are denatured and becomes harmless. For additional security, you can brush the oven floor with a camp cloth covering the brass brush. I have used this technique for over two years without any clinical evidence of cross contamination.

Hi Chef, I see you have used a whole bag (1kg) but for a family it would be too much so what I'm asking is for 3 - 4 people what would be the quantity? Please help.

M M, on the bag f Caputo flour you will find the recipe. Just divide the quantities by 7, then multiply by the number of pies you want to make. A kilogram of flour makes 7 pizzas. Per Pizza, 142.85 gr flour, 114.29 gr. water, 2.14 gr yeast, 5 gr oil, and 5 gr salt.

how long can this sit in the refrigerator? And can dough balls be frozen?

in the fridge up to 24 hours. Frozen up to a week.

Yes, no problem, thaw it slowly for a few days in advance in the fridge, and it comes out great.
