So in NZ where vitacost flour is not available I would use a homemade gf flour.. 600g white rice flour, 600g brown rice flour, 400g potato starch, 200g tapioca and store that. I then add 1/4 teaspoon xantham gum per cup of flour added at the time of baking...so in this recipe 3 1/2 cup of the gf flour premixed and 1teaspoon of xantham gum. To substitute for the Vtacost flour.

Hi from Australia 🇦🇺! these buns look great! My son has celiacs disease too & he loves bread n carbs so as u know it's really hard to get that 'chew' & mouth feel without gluten, so finding great gf recipes is so important. We have Nicoles book which has wonderful recipes, we especially love a wrap made with mozzarella . A lot of her recipes contain the ingredient called Expandex which is supposed to give a great consistency & chew...i haven't purchased it yet. I am going to try your buns today! Great video.... HI! We have used Expandex and it works great but I just haven't been able to find it very often. You can still get some great tasting things he will begin to really like (and if you can't find the Expandex it will still be good:) I understand your son's desire for the qualities of gluten and it is rough:( My 3 kids were all under the age of 8 when we went GF and the pizza recipe we have up saved us! Through parties at home and out and about! Give that a try - I hope he enjoys it! Any questions feel free to ask!!

Just made these and they are very dense.. suggestions on what I can do differently? The taste is quite nice!

Hi! I agree the taste is so good! They are certainly more dense than a few brands we have purchased but the taste is so much better. They only thing I can say to help them not be too dense (although like I said they are slightly more dense then retail ones) is to make sure you I mix, on high, until it it looks "whipped". we just made them this weekend and the first bite of the hamburger there was a chorus of "Ummmmm" from 4 mouths -LOLOL!

Hi Dunnia, milk powder may work?...i purchase buttermilk powder online and it's soo convenient! it's great for marinating meats, baking, making ranch etc

Substitute yoghurt or add some lemon juice or cidar vinegar (1tsp) to milk until it curdles. Reduce the liquids. Or add milk powder and 1/2 tsp citric or tartaric acid.
