Hi Geraldine! Thank you so much for your kind comments. I'm glad your family loved it! It disappears in my house so fast I barely get any :) I haven't tried freezing it yet so I can't say how it would go, but I will say that we always notice that it's still super moist on day 2 (so at least you could bake the day before, don't slice into it, cover it, and serve the next day.) I'll be making this for Christmas too...and probably Thanksgiving as well!

Thank you for your wonderful recipe, and for answering Renie Ashbough. The messy spill over in the oven also happened to me as well. Plus I didn't add the right amount of butter to the recipe. I though two sticks of butter equaled 1/4 cup. And find out it required 1 cup! All in all it somewhat turned out. It taste great, lol. But your Sandwich Bread turned out great. Both my husband and I love it. Thanks for sharing all of your recipes.

Hi Raymen...yes, tapioca flour (starch) and corn starch are all carbs. Brown rice flour is just a little less so (little bit of fat and protein). The majority of almond flour is fat (with some carbs and protein). I usually use a combination of 3 flours to get the texture/flavor that I'm looking for, and this combo works so well :) You could try subbing in some almond flour but I would recommend combining it with a couple other GF flours/starches. Hope it works out perfectly for you!

Sharon Young I just made your recipe for your pound cake. This the best gluten free pound cake I've ever made, it so moist and buttery. I omitted the cinnamon and glaze, because I'm useing it to put strawberries over, like we did in the 50's with pound cake. Also peaches are also good, and whipped cream. This cake is delish!!!!

Hi Patricia - Thanks for your interest in the pound cake! I always recommend using the recipe as printed, whenever possible. Every gluten free flour mix has a different ratio of different flours/starches, so I can't say if your results would be the same. The other concern is that without knowing exactly how much xanthan gum is in the pre-made mix, you won't know how much to add (if any). Even a little bit more or less can make a difference in the results. Whatever you decide to do...I hope it's a delicious success.

Hi Kinjai. If you are only trying to replace the cornstarch, try subbing in potato starch. I've not tried this yet with the Cinnamon Pound Cake though so you may have to experiment a little. Hope it works out great. Enjoy your pound cake!

Hi Jenny...this recipe does use brown rice, but not white rice. The combination I've listed (brown rice, tapioca, cornstarch) is what I personally think works best for this recipe, but if you can't find brown rice certainly try a sub. Perhaps try sorghum to replace the brown rice (keeping the tapioca and cornstarch the same). As I've never tried sorghum in this recipe I can't guarantee the outcome, but it's the one I would try first as a sub. Hope it's a delicious success!

It's best to use buttermilk if you can...it really helps to make this cake tender and moist. If you don't have buttermilk in your fridge, then you could try a substitute of 1/2 cup regular milk with a couple teaspoons of vinegar added into it. Let this sit for 10 minutes to sour prior to using it. It should work pretty well. Hope this helps!

Hi Heather - I've never tried to freeze this because we gobble it up so fast. I think it would work if you wrap it really well (plastic wrap, then tinfoil over it, or something similar) and then to serve, just microwave a slice for a VERY short time just to warm it. I'd love to know how it goes...let me know if you get time :)

I decided to do a trial run of this recipe since it was a request for my sons upcoming birthday. I'm so sad to report it was a complete disaster! I followed everything exactly except I used my Kitchen Aid Mixer. I did notice that the batter seemed a lot more "Fluffy" compared to your batter. When I filled my bread 9 x 5 (double checked my measurement) pan it was very close to the top and it concerned me a bit. Well, it overflowed into my oven made a huge smokey mess. SO SAD! Can you give me any tips??? My son really wants this for his birthday. All my ingredients were new and like I said followed everything exactly. I live in Oregon, so I don't think altitude has anything to do with this failure. :(

Hi Renie...oh no!! Something went crazy. Let's try to troubleshoot this so your son can have this for his birthday! It's super yummy and I don't want him to miss out on it. :) OK...so it sounds like you were very careful to follow the directions. Here are a few thoughts I had off the top of my head: 1) the height of my pan is 3.5 in. Could yours be a tiny bit shorter? That would definitely be a problem which would cause it to overflow. 2) Are you weighing your flours? This is the most accurate method. If you are not, then please be sure not to scoop your measuring cup into the flour bag. This would result in lots of extra flour. (extra flour = too much batter=overflow). Instead, spoon the flour into the measuring cup and then scrape off extra with the back side of a knife. 3) Use size large eggs. Make sure they are not extra-large. (I've made this mistake myself before). With five eggs in the mix, extra- large eggs would be way too much egg. 4) Because you said that your mix was more fluffy, it makes me think that you could possibly be mixing for too long, thus adding too much air into the mix (creating a fluffier batter that would take up more space in your pan, that would possibly overflow.) Don't have your mixer continuously running...only mix as stated in the recipe. I hope these ideas help...let me know how the next cake comes out :)

Hi! Thanks for the quick reply and all the great tips. I'm NOT giving up! I think it could be a combo of #1 and #4, my pan is only 3" high and I mixed the length of time you suggested but because I think my mixer is different I'll not go as long and shorten it by a min or two. THANKS! I'll let you know how it turns out :)

OH MY! I feel terrible that I forgot to let you know how it turned out!!! Well it was a success! I ended up using a bunt pan and it was perfect! The other pan was not deep enough. My son loved it!

Is it a stand mixer?They beat at a faster rate than a hand mixer.That would incorporate more air into the batter manking a larger volume of batter.
