Yes, Angela, you can use vinegar! I prefer tamarind because the tang is a little different, but nevertheless they both work😄

Hi Deepak! I made this to be eaten with rice, so I added a little more water. The consistency can be adjusted to your liking. Also, as it cools down, the water thickens a little; therefore I tend to make this watery. Thanks for your interest in this recipe😄
