During Christmas, if you're looking to go traditional, give this recipe a try. This recipe is for the traditional 'Dodol' and it consists of 3 core ingredients - Coconut milk, rice flour and palm jaggery. Doing a little Wikipedia research, I have read that Dodol apparently is Indonesian and the recipe travelled to India due to Portuguese trade. Isn't it interesting how cultures collide, and on a global scale!

Ingredients:
5 cups grated coconut (400 gms) [from this extract 2 cups of thick milk and 5 cups of thin milk]
2 and 1/2 cups jaggery (500 gms)
1 cup rice flour (110 gms)
2 tablespoons of sugar
1/8 teaspoon of salt
10-12 chopped cashews (some prefer using peanuts)
Halved cashews for garnish

Hi, Maria :) To know when it's ready you have to spoon some (like half a teaspoon) onto a plate; that dollop on the plate must hold its shape (not flow or disintegrate) when touched after a few seconds. It mentions it in the video, but I'm glad I could answer in a more detailed way through your question💫

As for the question, yes, my dear, the dodol receives it's dense flavour from the palm jaggery, it's kind of like an essential ingredient. The cane jaggery won't be able to provide that same flavour. Thank you for your interest in this recipe, Nemi :) The thick Coconut milk refers to the first milking of the ground coconut, usually done with less water. Thin milk is formed from the 2nd, 3rd,... milking. For the thick Coconut milk, I divided my grated coconut into two batches and ground them once each with 1 cup of water and then squeezed it through a sieve (so that gives 2 cups of thick milk). Then, I ground the two batches with 2 and 1/2 cups water each (that yields 5 cups of milk). You can do it as one batch as well (first with 2 cups then with 5) if your mixer jar can contain that much of volume. Hope this helps💫

Hello, Albina :) Dodol is a sweet that tastes best when fresh, and can't be stored for too long because it is a moist sweet. Its shelf life is around a week at room temperature, depending on the climate. To increase its shelf life, it must be kept in a dark, cool and dry place, occasionally allowing it to be aired; or cover with foil/in a container and refrigerate. To deal with the prepared dodol: depending on the extent of growth, you can cut away the portion with a clean, dry knife, making sure to not contaminate the unaffected portion. Then cover the good part well and store in the refrigerator. Consume within a short span. Hope this helps 💫

Not very impressed with this goan recipe. Kerala Alva more superior and we in Malaysia the Malays make their dodol much better and tastier. They make it with pulut flour(sticky rice flour).It's awesome and so tasty. Your presentation is very poor mute dumb video. Awful music.
