Thanks for your appreciation, Blossom. The rissois can be frozen for months. But being a non-veg item, the taste could reduce over time. Best to not freeze them for more than 3-4 weeks .

So glad you'll be trying out my recipe, Glen. Crimping the edges won't make any difference because the rissoles puff on deep frying them and swell completely. This is a kind of choux pastry you could say, but without any egg. This kind of cooked dough has a different texture. It's softer and lighter, almost like a potato covering. Hope I've answered your question.

Ursula, mix just enough breadcrumbs tio the mashed potato till it becomes non-sticky and you can mould it. Hope this helps. Instead of breadcrumbs, you could also mix some cornflour with the mashed potato.

Hi Fiona! I'm from Chinchinim. About the rissois, you have to get the dough for the outer coating right. Follow my recipe exactly, and you won't have any problems with your rissois.

Hi Jocyleen. If you want to make small, appetiser size rissois like I have shown in the video, then with the quantities I used in that recipe, you could make 25 rissois. So for 50 small rissois, just double the recipe. Use twice the amount of each ingredient. But if you want to make regular size rissois (slighter larger ones) then triple the recipe and use three times the quantity of each ingredient. Hope this helps. Best wishes and God bless!

I know, John. But sometimes, if you're lucky, you can get a good deal. The same thing happens here in Mumbai. You just need to buy 1 small 'vatta" of prawns for this recipe.
