One of the most celebrated vegetable of winter season is cauliflower or gobi. It is very much #tastyandhealthy as well. Well, gobi has a special place in Indian cuisine and almost every part of India, it is being used, sometimes as vegetable, sometimes in curry or sometimes as an accompaniment. Today we are going to show you a very delicious yet simple North Indian dish which is famous worldwide for its taste and uniqueness. It is mainly prepared during winter season as gobi is seasonal vegetable that comes during winter season.

Ingredients:
1 cup grated Gobi / Cauliflower
1 tbsp chopped Green Chillies
1 tbsp chopped Ginger
1 tsp Red Chilli Powder
1 tsp roasted Cumin Powder
1 tsp Ajwain / Carom Seeds
Salt to taste
2 tbsp chopped Coriander Leaves
1 tbsp Amchur / Mango Powder
Atta Dough - For Parathas
Ghee
Butter - To garnish
Pickle / Dahi - to serve with
Method:
Take a bowl. Put all the ingredients one by one and mix everything together. Once it is done, keep it aside for few minutes. Then take a fresh cotton cloth, put the stuffing in that cloth and then squeeze the whole thing to separate the water from it. Now take the dried stuffing in a bowl and add amchur and then mix it together. Now take a small portion of the atta dough. Make it round and flat in shape from the edges keeping the middle portion thick. Put a generous amount of the gobi stuffing in the middle section of the flat dough and then wrap it from the edges so that all the stuffing should be inside the dough of the paratha. Now make a nice ball shape and sprinkle some flour dust on it and then roll out the dough into a nice flat bread just like roti or Indian bread. Repeat the same. Take a tawa and put it on the flame. Let it hot for some time. Then add the flat bread onto the tawa. Once it is cooked from one side flip it to another side. Put some ghee on the cooked side and then repeat this again on the other side. Your gobi ke parathe is ready. Serve Hot along with pickles. Enjoy!
