You forgot to add that Rimuru have Reactive Evolution that allows his body to keep adapting to threats. It means if Goku would hit Rimuru once with his ki, he would develop resistance to it. Also his new skill Michael that allows him to use Castle Guard, the strongest defense in Tensura that protects you as long as someone believes in you.

Since u mentioned his abilities from the LN, let's consider that version which is pretty much an overkill, there's pretty not much goku can do tbh. Rimuru's Power Level is not very high. It is a Hax-based Isekai Caracter that can only copy, but does not become stronger of its own accord. He must absorb weaker enemies to increase his Power Level. Goku has gotten stronger and better through years of training, and his transformations are some of the most powerful in existence. Rimuru loses the fight before the fight even begins.
