Gone In A Hurry Cake

No act of love, however small, is ever wasted.
Easy cooking for busy families
3 cups flour
2 cups sugar
1 tsp salt
1 tsp baking soda
1 tsp vanilla
3 eggs, beaten
1 cup crushed pineapple, drained
2 cups shredded coconut
2 bananas, mashed (ripe ones are best)
1 1/2 cup vegetable oil
1 cup nuts, chopped (walnuts or pecans)
Preheat oven to 350 degrees.
Combine flour, sugar, salt, and soda in a large mixing bowl and mix well. Add the remaining ingredients and let stand for 5 to 10 minutes.
Using a large spoon or spatula, mix ingredients well to combine. Make sure that all the dry ingredients are moistening and there aren't any pockets of flour remaining.
Grease and flour a Bundt pan. Pour in batter and level top. Bake in a 350 degree oven for one hour to one hour and fifteen minutes, or whenever the top of cake springs back when gently pressed or a toothpick inserted into the center of the cake come out clean.
Remove cake from oven and let cake stand in pan for 10 minutes and then turn cake out of pan on to cooling rack. Let cake cool completely and dust top with powdered sugar. Keep in airtight container or covered with plastic wrap to maintain freshness.

Hi Linda I made this cake this afternoon and used my black walnuts. I only added 1/2 c sugar ( my husband is a diabetic) this cake is sweet and delicious! Thank you so much for sharing. Love black walnuts in fudge or cake they are so good.....and a lot of people doen't like them, neither of my kids do.....I remember growing up my Dad cracking them with a hammer and it was so hard to get the nut part out.....I buy them every now and then and just eat them by themselves.....they are expensive....

Tried the gone in a hurry cake. Made some alterations used one cup of pineapple juice instead of one cup of oil used one half cup of oil and substituted one cup homemade strawberry fig preserves instead of bananas I also added one half tsp rum flavering that bring out the taste of the fruit and nuts. Family loved it.

Several people have said it sounds like a hummingbird cake so I looked the ingredients up....the pineapple and bananas are different quantities and this cake has no cinnamon (although next time I'm going to add it) anyway, that's the only difference. You could always cut the sugar down by using 2 tablespoons of apple cider vinegar and then after you put your 3 cups of sugar or either 2 cups of sugar for making a pound cake mine's came out just fine it was just the right sweetness to it not too sweet and not too bitter not bitter at all but you know it was the right flavor Miss Phyllis is the one that told me that what the hell is this

Your cake look too good in all that you added to it Eric scrumptious and I'm going to try that and imma let you know how mine's turned out and don't forget about the Bennett her if you want to add your three cups you can add two teaspoons of apple cider vinegar and it should be just fine it won't taste like Jack hurt either but I'm going to try to make that pound cake with all the ingredients and but I'm made pound cake before you are so good in the past turned out like that you know the different flavors of vanilla and rum and you know different flavors lemon daughter extra X but anyways I made one real good too with the vinegar cider so it won't be so sugary a God bless you until the next time
