Easy cooking for busy families
Preheat oven to 325 F
Spray a 9" springform pan with cooking spray and coat with graham cracker crumbs. Set it aside.
Ingredients:
**ALL INGREDIENTS ARE ROOM TEMPERATURE**
**USE IN ORDER LISTED**
16 oz of small curd cottage cheese
16 oz of softened full cream cheese
1-1/2 cups of white granulated sugar
4 eggs slightly beaten
1/3 cup corn starch
2 Tblsp. lemon juice
1 tsp. pure vanilla extract
1 stick of butter which equals 8 Tblsp. melted (I used salted butter)
16 oz. of full sour cream
Add the ingredients in the order listed
Add the cottage cheese and the softened cream cheese to a large mixing bowl and beat on high until smooth.
Slowly mix in the sugar
Add the eggs
Reduce the mixing speed & add the cornstarch, lemon juice and vanilla and blend well.
Add the melted butter and sour cream and blend on a low mixing speed.
Pour into your prepared 9" spring form pan and bake @ 325 F for approx. 1 hr. and 10 minutes or until the edges become firm. Turn your oven off, don't open the door and leave the cheesecake in the oven for 2 hours before removing it. After 2 hours remove the cheesecake and refrigerate for 4 to 5 hours before serving.
