You made our christmas a lot better with this lovely lentilnutroast-recipe!! I (16years old) made for my parents and the grandparents from my fathers side a 3 menu (almost) vegan christmas dinner. The first meat-free christmasdinner since I can remember. Everybody was satisfied and happy and I was really proud of myself😅. When I was test cooking a nutroast-recipe everything fell apart and I was wondering what I want to serve on christmasday at all but luckily i fell upon your recipe one day before starting with the preparations - and(!) it worked absolutely fantastic with the sidedishes and was (next to the chocolate tarte) the star on this evening! A huge 'thank you' going out to you! (How logical everything was, with blitzing, the flax egg and the breadcrumbs almost made me laugh because everything that missed in the other recipe was there now) Huge recommendations to everyone who wants to try this roast, I'm pretty sure you won't be disappointed at all - I wasn't at least. Ah, and i made it in a wreath shape - worked out pretty good. Again Thank you! This was the perfect timing! I always look forward to Sunday and a new Good Eatings video :) when I need to chop mushrooms finely, I just use my box grater and grate them! it saves a lot of time and no chasing of rolling mushroom escapees!LOL

I have this in the oven now. I only had pardina lentils so I used those and I'm not familiar with the mushrooms you used so I used baby bella. We're actually having this for dinner tomorrow but I've found cooking, cooling then reheating helps it stay together. My kitchen smells great and I'm so excited!

@@calmersutra8739 we cooked it for 45 min in a convection oven, let it cool to room temp then refrigerated it until dinner today. It sliced well right out of the fridge with a serrated knife. We reheated the slices in the oven and they were so good!

So glad you want to try it 🤗 I would add a little extra bread crumbs if I took out the nuts as they help with drying the mixture out a little. Or maybe swap for seeds like sunflower and pumpkin? Hope you enjoy the roast 🌟🤗

It’s been years (decades) since I’ve eaten meat but, it’s so much easier to just plonk a chicken in an oven than to go to all that trouble with nuts, lentils, veg, bread crumb, chopping, blending, sautéing, pre-soaking, boiling. So I can see some people thinking vegan options are too much bother. I’ve already had my solstice dinner - vegan wellington and all the trimmings.

How do you serve the whole meal at the same time? Since the oven temperatures from the potatoes and nut roast are different?

I make the roast ahead of time and warm it with the vegetables at the end of their roasting time. Usually we would make the roast the day before. It's just as good the next day. 😊
