It's time for the first what I eat in a day of the year and in this one I'm sharing some of my favourite beginner friendly vegan meals. Hope you enjoy!

Creamy Pasta w/ Mushroom, Tofu and Spinach Recipe: bit.ly/3ojTLqF

Hummus Recipe:
2 cans of chickpeas, drained and rinsed
1 lemon, juice only
3 tbsp tahini
2 tbsp extra virgin olive oil
0,5 tsp garlic powder or 1 garlic clove
Salt and black pepper, to taste
5-6 ice cubes
1-2 tbsp water, optional
Place all the ingredients including 1 tbsp water and 1 ice cube into the bowl a food processor with an s-blade, reserve the remaining water and ice for later. Start processing and leave it running for roughly 5 minutes. For every minute add another ice cube, this will keep the hummus cool and will add some liquid into the mixture little by little. Taste the hummus at the end of the five minutes and adjust the seasoning. Add the second tbsp of water if you find the hummus a little thick. Keep in an air tight container in the fridge for up to a week.

Seed Cracker Recipe:
0,5 cup pumpkin seeds
0,5 cup sunflower seeds
0,5 cup sesame seeds
0,25 cup whole flax seeds
0,5 cup corn flour (not starch)
0,5 tsp salt
1 cup boiling water
0,25 cup olive or rapeseed oil
Sea salt flakes, optional
Preheat the oven to 150 degrees celsius.
Combine all the dry ingredients in a large bowl and mix to combine. Make a well in the mixture and add the boiling water and oil. Mix well and then allow to swell for about 15 minutes or until it is a sticky mixture. Line a baking sheet or two depending on the size of your sheets. Spread the mixture out into an even and thin layer. Make sure there are no gaps anywhere and that it's no thicker than a single layer of the larger seeds.
Bake in the oven for 60-90 minutes, they are ready when they are golden and firm. Remove from the oven and allow to cool on a rack. Break into any size you like, store in an air tight jar and enjoy.
Note: You could season these crackers with any spices or dried herbs you'd like, simply mix them into the dry mixture.

As always, I find your videos to be absolutely delicious on every level....beautiful food, lighting and filming, presentation, music, and your upbeat and warm personality! So inspiring and yet very relaxing. I find I want to get up and cook and also just curl up with some warm ginger tea and enjoy the video again, lol! I loved seeing the walk in the rain...it's so fun to have glimpses of other people's towns, cities, and countries, plus I love being out in nature. WOW Malin, these meals look amazing...fresh and also comforting! And time with sisters is always so special :). I have Celiac, so it's helpful to find someone who shares recipes that are gluten free and plant-based vegan. And I struggle with IBS as well, so thank you for sharing that. A walk in the Rain sounds lovely. ☺️ Pasta looks very yummy. I have fresh Spinach and Mushrooms in there I need to cook up. I'd have to do without Tofu. ☺️ i Love chickpeas now. But I want to try to make Hummus from white beans.

Probably my top 3 most made meals too! I make my oats the same way, with frozen berries and tahini, but I also add lemon juice (like 10 drops) and lemon zest! ads a nice zing.

I share vegan recipes on my channel in addition to information about vegan food as my husband is vegan and to my surprise I discovered that flax seeds is a source of ALA omega 3 but not EPA or DHA which are found in animal sources, so my husband started taking omega 3 supplement from algae. How do you get your full need of omega 3?

Hi there 😊 I also take algae omega3 to make sure I get enough. Your body can make DHA and EPA from the fatty acids in milled flax though, so even if it is not readily available you should still get the omegas you need 😊👍

@@GoodEatings yes the body can convert AlA to other forms of omega 3 but I read that the conversation rate is so little that you must take a supplement.

Hi there 😊 You could try buckwheat, I seem to remember that works or if you are not gluten intolerant or allergic you could always try spelt or all purpose 👍

Recycled plastic is a misnomer, as in order to recycle it new plastic has to be added. If the products came in any other non-plastic packaging, I'd definitely consider them. In the meantime, I'll wait.

To be honest, putting all that stress on beginner vegans to cook from scratch every morning, to spend so much time in prep, is over-ambitious. It'll put them off, deter them. Who wants to fuss around that much, first thing in the morning? They'll get to that point in time (maybe), when they're grounded in veganism. A fortified cereal is just as good in the early stages; it includes all the B vits and iron that you need. Just check the box. (I add a tbsp of chia seeds!) We need to make these recipes beginner-friendly, not terrify them from the off. As for evening/dinner recipes -- well, no holds barred. Go as fancy as you like. Wahey! :)

Thanks for sharing your thoughts 😊 I always think oats is a good option for breakfast as a new vegan, it's very hard to get it wrong and most people already know how to make it. I could have mentioned that you can also do it in the microwave but other than that I think it's a solid beginner breakfast. It takes me about 4-5 minutes to prep and cook the oats. The toppings take about one minute to add and obviously you can do whatever floats your boat, add less if it is too many things to deal with in the morning or more for that matter if you are into a lot of toppings. 🤷‍♀️ I guess we all have different preferences and ideas of what's easy. Also many people might not want to fuss at dinner after getting back tired from work while others enjoy cooking, everyone's different. 😊

@@GoodEatings Yes, basic oats are a good idea, and not so off-putting for beginners. And definitely true, everyone is different as to the times of day when they are more free/willing to cook. :)
