Nailing duck on the very first try is pretty impressive. It’s not necessarily a super complicated protein to cook properly, but it definitely takes some experience and knowledge.

I'm amazed. I used to work in kitchens and had a par cooked duck that I just needed to heat up in the oven at home and I ruined it... I cooked steak and everything else no problem just I thought I was gonna die.

It is strange in some things, being further away from it or having less knowledge or different knowledge can be your strongest asset. Perhaps ppl mess itup sometimes because they treat it like other meats. She doesn't often work with meat. As wel as, since she doesn't probably eat alotof it or serve it, she's probably had t develop a keen eye to how the meat reacts in the oven or how t treat it. Smething to think about.

It's not as complicated as it is simply time consuming. You need to render that surface fat so there's and offset between the meat and the skin. The thing that makes it slightly more forgiving than other poultry is that it's very hard to dry out.
