There are soooo many vegan dishes that taste way better than this and can be done in less than 1 hour. Just look at Indian food. Replace the ghee with some kind of oil or vegan butter and the cream with coconut milk or soy cream and you get the pretty much the same result, that is delicious, healthy and quite quick to make. 😂 Gordian ramsay, improve your vegan dishes game. Visually, looks great. Texture, sounds like a nightmare. Why on earth would you choose eggplant when there are wonderful ingredients that could create a much more substantial "MEATY" feel? Tempeh, tofu, TVP, seitan, hell even mushrooms are a better choice. If you want to learn about vegan meaty-ness, humble yourself and learn. Check out the channel Sauce Stache. He's a true magician.
