Saying amateur is a bit far imo, when he has made different styles of asian cuisine in other videos they have been quite well received even from high-tier food critics of those respective countries. Sometimes they have slight criticism, but generally not major. He does very well to adapt to cooking cuisines he isn't used to. He's a very capable chef to say the absolute least.

In Thai its call "Saiauo - ไส้อั่ว" It is special sausage by northern Thailand region. The taste is amazing and fabulous which mix many local natural herb.

When you say Thai sausage it actually splits into two completely different types of sausages. - Northern's Sai Ua as in this video, and .. - Isan's Sai Krawk, made from minced pork/beef mixed with cooked rice and then leave in pork casing to dry in open air one day for yogurty taste before grilling. >In northern type, full load of various spices is mixed, no fermenting, then frying in the end process. >In Isan type, only garlic, salt, sugar, coriander root and little ground pepper are mixed, no spiciness, grilling in the end, eat with ginger slice and cabbage, fresh chillis.

I'm from the region where these sausages are made. They are called 'Sai Ua'. They are very fragrant from all the herbs and spicy from chilli used. Each province has a slight twist to the flavor. I am from Chiang Mai and the color of the sausage is like dark brown (at times look like turd but in no way tastes like shit) while from another province like Naan, the sausage is redder and less spicy.
