I don't understand the whole secret herbs & spices thing...there's only like a few herbs & spices that exist and you can guess all of them just by tasting the food none of them are actually secret lol. But it helps if you're a super taster like me with a hyper sensitive seasoned palette I can accurately guess the flavours in anything just by tasting...except for those artificial flavours that flavour chemists create

@@williamsoderlund4105 And for every herb there's usually fresh & dried versions of each which taste a little bit different but lucky for me I know what they all taste like both dried and fresh Main herbs used in cooking are: basil, thyme, rosemary, parsley, coriander, oregano, sage, bay leaf, marjoram, mint, tarragon, dill, chives, lemongrass, lemon balm, lemon verbena, lemon myrtle, fennel, curry leaf, kaffir lime leaf, celery leaf, spring onion, banana leaf Main spices used: cumin, cloves, nutmeg, all spice, cardamom, chilli powder, garlic powder, onion powder, star anise, caraway, cinnamon, ginger, galangal, celery seed, mustard, vanilla bean, fennel seed, coriander seed, fenugreek, paprika, turmeric, peppercorns, sichuan peppercorn (not real pepper), saffron, sumac, licorice, wasabi, tomato powder, dehydrated black lime powder Now you won't really find many recipes that use other herbs and spices because they are rare to find unless you forage in the wild or are able to get them from a special store. So the native less common herbs & spices aren't used in many recipes because they aren't readily available most the time for people to buy. And in japan they basically use seaweed like a herb & miso like a spice...but I wouldn't consider them herbs or spices

For those who don’t know. The U.P in Michigan is like a different world. I sportsman and fisherman’s paradise. It’s not uncommon to have 3 ft of snow up there in May. It’s absolutely beautiful.

Super cool!! Take it from a guy who doesn't really like fish. I've had smoked lake trout before and it is awesome!! Better than smoked salmon is in my opinion. We were eating it cold while ice fishing. Really good and falls right apart in your mouth. I imagine smoked fish sausage is a step better!! Would love to try it. Venison sausage is a good ice fishing food too!!

The Upper Peninsula of Michigan is still a secret, it's virtually untouched. I was back there in 2019 after a year in college in 1977. It had not changed at all. If you like wild life - that's your place. People are very down to Earth. It's inexpensive to boot.

“Troll” is a common word used in Michigan, particularly the Upper Peninsula. It refers to people from the Lower Peninsula. It refers to the fact that they live south of the Mackinac Bridge, just like trolls live under bridges. Conversely, people from the Lower Peninsula refer to people who live in or are from the UP as “Yoopers”. That one’s way more self-explanatory.

I have family up there in the keweenaw and I have been to Captain Ron's place. Now I don't know if his place is still running or by who now. But there are more than just him doing that there. Peterson's Fish Market is also a great place to stop at. Not just to get the freshest fish, but all kinds of smoked fish and do have a great restaurant next to it if you just want to eat the fish right away.
