I'm a trained chef, I remember back in 2010 I was living in London and I was really fed up with the culinary industry (working long shifts, employers that don't motivate their people, etc) then I started watching the F word, kitchen nightmares, hell kitchen, etc. And watching Gordon's passion and respect for food made me fall in love once again with cooking, His inspiration is what I call passion for the trade. Thanks Gordon for helping me and I'm sure many other chefs around the world, getting back on track and regain our passion for food.

@@dereksmith9214 Hi! it's so true, sadly work in the culinary industry is not well recognised. Those who work on kitchens are very passionate about their work and most of the time their hard work goes unnoticed. Me too, since moving from professional cooking (I've been working for a mayor airline for the past 10 years) I do most of my cooking at home, or at friends houses and from time to time, I help creating specials and new menus to a friend who owns a bistro.

Yep, that's why I never went to culinary school. People have told me "why don't you pursue a culinary degree or career and become a chef?" Nope. Cooking at a restaurant, even if I owned it, for other people, strangers etc doesn't sound enjoyable at all. But cooking at home for myself, or at my parents house for them, or a friends at home I love.

Tip for those who don't have a gas top on those tortillas - I put mine under the broiler draped over the oven rack - gravity and the heat lets them hold their shape, and it even gives them a flatter bottom so they stand on their own. Just be sure to keep an eye on them, otherwise your kitchen will smell like burnt popcorn.

Wow great quickness well done videos . I was a cook now retired trained by a French chef. My everyday ingredients are like yours a good stocked pantry fridge is key for variety. Yummy foods you make in record time. I use to prepare things ahead for a week with busy family life. Cutting up vets making herb blends ahead, sauces, roux,etc. I’d make my own spice blends never bought after I learned how to make them. Ex: taco spice, pumpkin pie spice, etc. there’s a lot we can do to save time in kitchen

FYI, the best and tastiest way to get form-fitting tortillas, either corn or flour. Put a skillet on the burner, add oil of your choice, I prefer extra virgin olive oil, heat it to a hot temp, and drop the tortilla into the pan. 4 seconds on both sides, pull out and shape and add filling. Delicious and fast.

We called this fritters: bakwan. A common street food In here they sell premix flour for bakwan. In Manado Restaurants they sell even better corn fritters. You can use cabbage & carrot for crisper fritter. Eat it with bird eye chili
