@Andrew Orr butter and cream contain trans fat which is OBJECTIVELY unhealthy. There is some debate about saturated fat. In very large amounts like Gordon used, it is unhealthy and documented. Your uneducated opinion does not matter, science is against you

Reminds me of my mother cooking. She could cook anything. Now that my children are grown up and I look back at my life and what I would do over , the Biggest thing is I would still be at my mother’s house ! There wouldn’t be a Police Department that could drag me out if I had a do over ! Screw leaving her ! She cooked did my laundry and always had good things to say about me no matter what rotten shit I caused ! Oh yeah, Momma House! I can remember friends in High School asking me if I needed a ride just to get me to invite them in because my mother fed everyone until they would pop ! My friends mother asked him what we did at my house that we couldn’t do at hers , he said that’s easy his Mother knows how to Cook ! A little Jewish woman that is still my hero ! G d Bless her ! As an Italian I can tell you this is the right way to cook a sauce for pasta: not too many ingredients, but chose the right one. Never put sour cream and always cook pasta 2 minutes less than what’s written in the package, because while you mix it with the sauce it still cooks. Finally somebody who is not Italian which knows how to cook pasta, couldn’t expect more from Gordon

This is one of my favorite recipes from the cookbook! Its so easy! I dont ever have fresh sage or leek so i just used ground sage & more shallot and it works well. The flavored breadcrumbs really make the dish. 😋

Salt doesn't make non-boiling water come to the boil quicker. It actually increases the boiling temperature so if you add salt to non-boiling water it takes *longer* for the water to boil.

Correct. Simple physics of saturation. Salt saturates the water. The higher the saturation, the higher the boiling point. You salt the water to season the pasta, or whatever you're blanching, not to make it boil faster. Pretty upsetting he said that. But... I guess he's a chef, not a physicist, or chemist (although chefs should have a really good understanding of the chemistry of their food.)

Adding salt to water will increase the temperature needed to boil and will also increase the time needed to boil. It's called boiling point elevation.

When I want the water out, I use my homemade ghee instead of butter. Sometimes I want water, making caramelized onions for instance. I'm an amateur, and make some things up on my own. I like the onions to steam, covered, until the cells break down, then up with the heat, very hot constant stir until the water is gone, then medium until caramelized. Of course, though your goal here is a little caramelization, it is not a dish of caramelized.

Don't skip the sage encrusted breadcrumbs. The texture ( and buttery, herby flavour ) they bring to the dish is the icing on the cake. Would never have thought of adding breadcrumbs to pasta. But it's great.

Yes! I made this tonight - I used egg noodles 'cos I didn't have the other and I used regular onions and celery 'cos I didn't have leeks and sour cream 'cos I didn't have regular cream (yes I could have used milk but I thought the sour cream would add a nice flavor and it did) BUT I have tons of fresh herbs - sage, parsley, basil - from my Aerogarden I got for Christmas. No one didn't like it - it got "pretty good' and "not bad" reviews. Yes I'd make it again.

Probably the ones he’s using in the video. They’re a nonstick pan but because they’re using some kind of special stuff you can go in their with metal tools and they’re also retaining the heat quite well. Forgot what they’re called tho and they’re pretty expensive if I remember correctly. Just google best nonstick pans or something and I’m pretty sure you’ll find them

Hey Gordon! As someone with a Bachelor's in Chemistry, I can say: Putting salt in water does not make it boil faster. Putting salt in water increases the water's boiling point, but salting it does not make the water boil any faster. With that being said, I'm sure it still tastes great!

Why don't these so-called meal-delivery kit companies (like hellofresh, blue Apron etc..there's a ton of them out there) ship out these "ramsay in 10" portioned ingredients and cooking instructions. It would be so much more fun and healthy to cook Gordon's recipes that way.

This looks amazing! I'm not supposed to have noodles or breadcrumbs because of my insulin resistance, but I can sub for zucchini spirals and almond flour or something else. I'll definitely be trying this recipe soon!😍

Salt water will not boil faster. It has a higher boiling point so it will actually boil slower (but get at 100 degree C at the same time)

its a common misconception. salted water has a higher boiling point but usually cooks the pasta quicker hence people getting confused and making stuff up.

Honestly, it sounds amazing. I'm honestly hyped about trying to do this recipe for my boyfriend, he likes cooking, and he always says that preparing some food for him is something that completely wins him over, so, I hope to make some of this recipes to make him enjoy a nice meal for a date.
