What Gordon DOESN’T know is that this was a test. The toe biters were actually ground up hot dogs, and the snails were actually spray-on cheese.

There is actually a Thai restaurant here in Oklahoma that serves recipes from your country on the weekends when the Laotian chef is there. It's incredible and a lot easier on the stomach than Thai food as well. Laotian food is somewhat rare here.

No cognitive dissonance. If you bite into a hamburger, and taste fish - you spit it out. If you bite into a snail, and taste snail - it's all good. Hell's Kitchen people are trying to make high-end dishes - so the people eating them already have expectations.
