I really love to cook dishes from the eastern side, lots of them are actually quite delicious! Although the only dish I could make consistently from said eastern side is egg fried rice. Gotta thank a certain uncle for that ;)

I think it should be rattan pepper, a special kind of pepper produced in Sichuan, which is ground into powder. In fact, this dish should be called 水煮藤椒鱼, which I used to like eating at home.

英文 "freshness" 说的是食材多新鲜。中文的"鲜" 通常翻译成取自日语的 "Umami"

When making stock from animals (beef, poultry, fish, etc), bones are normally used. I'm told the flavor comes from the small meat pieces stuck to the bone that is tiring to remove. (I.e. the protein, not the calcium. That said, the flavor could also be from the marrow) Stock making also produces grit, so you need to seive the stock afterwards. Some stock produce scum at the top, so gotta skim it from time to time. Using bones is a pain. You may find stock at your grocery store, or maybe bouillion.

If you're living in a metro like me, and you don't have time to do all of those steps you can just buy a hotpot soup pocket (Korean or Chinese stores), and cream dory fish (already sliced). Then do the same preparation and you're done in less than 10 mins. XD
