Eggless Strawberry Shortcake - Not forgetting to share an eggless version, after sharing the egg version couple weeks ago. Many have requested eggless cake recipe without yogurt (I understand it’s not convenient to get during lockdown period). I hope you’ll enjoy this recipe without yogurt. I always like the cake to be moist and soft, using with only milk is not satisfactory. Thus, I made homemade buttermilk by using milk, to make the cake another level, not only it is not dense but the lasting softness even after storing for a few days. I hope you’re inspired and give this cake a try. Enjoy!

Ingredients:
• Eggless Sponge Cake
I am using 6-inch pan
205g [¾ cup + 1½ tbsp] whole milk
1 tbsp white vinegar
215g [1¾ cup] cake flour
1½ tsp baking powder
½ tsp baking soda
130g [¾ cup + 2 tbsp] fine sugar
96g [¼ cup + 3 tbsp] vege oil
¼ tsp salt
1 tsp vanilla extract
• Strawberry Sauce
(you may refer to this video link • Japanese Strawberry Sh... )
150g [¾ cup] strawberries, chopped
50g [¼ cup] sugar
1 tsp lemon juice
• Whipped Cream Frosting
480g [2 cups] whipping cream
30g [2 tbsp] fine sugar
sugar syrup
[1 tbsp sugar + 2 tbsp hot water]
You will need a total of 400g [2 cups] fresh strawberries for the sauce, fillings, and the deco.
Instructions:
• Eggless Sponge Cake
1. Preheat oven at 180°C/355°F.
2. In a glass, add milk and vinegar. Give it a quick mix and set aside. (this is homemade buttermilk)
3. Sift all the dry ingredients. Set aside.
4. In a large bowl, add sugar, oil, salt and vanilla extract. Mix until well combined.
5. Add in the milk mixture in 3 batches, alternate with the sifted dry ingredients. Mix until combined.
6. Add in the sifted dry ingredients in 3 batches, alternate with the milk mixture. Mix until combined, do not over mixed. This simple alternate adding technique will give you a great cake outcome (fluffy and light, not dense). If you’re using a whisk, switch to a spatula to scrape the bowl to ensure even mixing.
7. Transfer to a 6-inch pan, greased and lined with parchment paper. Tap the pan on the table few times to release trapped air bubbles.
8. Bake in preheated oven at 180°C/355°F for 30-35 min or until inserted skewer comes out clean.
9. Once out of the oven, immediately remove cake from the pan and let cool completely before slicing.
10. Slice the cake into 3 sheets, 1.5cm thick each sheet.
11. Trimming the sides or brown edges is optional.
• Strawberry Sauce (you may refer to this video link • Japanese Strawberry Sh... )
1. Chopped the strawberries.
2. In a pot, add the berries, sugar and lemon juice.
3. Cook it over a low heat until it become a thick sauce.
4. Use a mash to mash the berries.
5. Once the sauce is thickened, remove the pot from the heat.
6. Strain the sauce. Let the sauce cool. Set aside until needed.
• Whipped Cream Frosting
1. In a mixing bowl, add the cream and sugar.
2. Mix until the cream is thickened.
3. Transfer about half the cream into another bowl. Use a weighing scale to be precise. Cover the cream and refrigerate until it is needed for use. This cream is for covering the cake and piping the deco.
4. Continue mixing the other half until stiff. This half is for the fillings.
5. Transfer this cream into a piping bag.
6. For the other half of the cream, use a whisk instead of using an electric mixer because the thickened cream will soon reach the smooth consistency within a minute or two. Use your whisk to pick up the cream, the cream will be smooth with a small tail falling back, that will be the consistency we want for covering the cake.
• Strawberry décor
1. Slice the fresh strawberries, about 2mm thick.
2. Use a round cutter of about 1.5cm diameter. Cut each slice for round circles.
• Assemble the Cake
1. Place a layer of sponge cake.
2. Brush with sugar syrup.
3. Spread half of the strawberry sauce on the layer. (just leave a tiny bit for drizzle later)
4. Pipe a layer of whipped cream.
5. Add the chopped strawberry. Cover with a thin layer of cream.
6. Repeat no. 1 to 5.
7. Cover a thin layer of the same frosting. Refrigerate for about 10-15 minutes.
8. Cover the cake with the smooth and soft frosting that was whisked.
9. Decorate around the sides with the cut strawberry circles.
10. Drizzle the top with some strawberry sauce.
11. Decorate some fresh whole and strawberry halves.
12. Chill the cake for at least 30 minutes before cutting it.

Dear Boone. Yes I agree with you about people who can't take eggs, so many of them is due to religion, vegetarian and allergies. However, my country has very few people who can't take eggs, we all love eggs, but one of them who can't is my niece, she is allergic to eggs. I then started to explore eggless desserts. You have some serious patience. The fact that this is eggless and looks SO YUM is tempting me to make it tomorrow, but the sheer amount of effort that has gone into this one is making me a bit lazy this cold weekend! Ahhh! 💯 True ! I tried it and the cake turned out to be soo good ! Thank you so much for this wonderful recipe 😋. I also tried a veriation: Exact same recipe, in exactly the same quantity, except - REMOVED ¼cup cake flour and ADDED ¼cup coco powder for chocolate cake. And instead of cream I used Ganache. This also turned out to be super soft and fluffy. Thank you once again 🌹

Hi Fiona! I recently made this cake and it was so spongy and fluffy! I honestly wasn't expecting the sponge cake to turn out to be so good without eggs to make them fluffy! Thank you very much for this amazing recipe! I had to add more milk than what was stated in the recipe to get the consistency shown here but in the end, it worked beautifully!

Love the video! Can I do this using your vanilla cake recipe with yogurt? if so, will I have to make a smaller quantity of the batter?

Hi Chloe, yes you can replace the entire amount of milk with yogurt. Towards the end, if the batter is too dry, you may add 1 tbsp of milk

Fantastic 😍 In India, we have non diary whipping cream available everywhere, which I don't prefer. Diary ones are hard to find. What kind of whipping cream have you used here? What's the other icing option we can use for this cake? Sorry for asking lots of questions. I have been watching your videos silently, only recently I got to see ur videos from random suggestions. Hi! My daughter is allergic to eggs and these eggless cake recipes are awesome. Could you please guide me how to bake ahead? Specifically: 1. When to bake cake and how to store it. 2. What kind of frosting can be done a day ahead . 3. Can cake be decorated a day ahead? How to store it? 4. I would like to make a tiered cake. How can I tweak the measurements in this recipe for a 9 inch cake? I have a 9 inch cake pan and I would like to bake a smaller cake to go on top of it. 4. How is sugar syrup made to put in the layers? Equal parts sugar and water boiled or just mixed together? I have made eggless cakes in the past but when I put cake in refrigerator they turn dry 🙁. I have two little ones and it is nearly impossible to make cake, party decorations on the same day while attending to them. Any input from you is highly appreciated 😊

Hi dear. I will try my best to answer your questions as follows: 1. You can bake a couple days ahead and store in fridge, in a air tight or at least a cake box (just like those box when you buy a whole cake from the bakery) or anything you big enough to cover the cover as you don't want your cake to get dry on the 3rd day. I understand your concern about storing in fridge and the cake gets hardened and dry. It's normal. Just bring out from fridge and leave the whole cake in room temp for about 1 hour, it will eventually softened to be consumed. You may display your cake in room temp for 1 hour if you're using buttercream frosting. For whipped cream frosting, 30 min is max. 2. In this recipe, I was using whipping cream. If you're preparing the whole cake and frost it ahead of time, this cream will be ideal. Just leave in room temp until softened and whip again until the right consistency to cover your cake 3. Yes you can decorate the cake by doing the drizzle first. If you're adding fresh strawberries, I advise you do it on the day you serve the cake, fruits will get dry up in fridge after washing and exposed. 4. for a 9-inch cake you'll need to double this recipe. Be careful on the baking time, you might need to bake additional 10 minutes or until the inserted skewer comes out clean. Like you said I have used whipped cream frosting in the past and 30 mins is probably not enough time for cake to soften and it was dry ☹️. My guests made comments like eggless cakes are not so great when it comes to texture. Do you think I should rather opt for buttercream icing? With kids, timing is something you can't control. Especially if you are trying to get pictures and then cut the cake 😄. I personally love whipped cream frosting(simplicity and no artificial colors) but, the design doesn't hold for long at room temperature. 2. I'm assuming you mean whipped cream decorations can be done ahead. For buttercream icing, it can be prepared ahead but decorated just before ready to present. 4. One 9 inch cake and one 6 inch cake should be good to make tiered cake for this recipe? Just out of curiosity, do you bake and decorate your cakes at a stretch? If so, how long does it take from start to finish? I understand it depends on the cake recipe but, just on an average. Yes plant based milk with the same amount of vinegar could also give you the buttermilk. Preferably soy milk 😊

Just a heads up to anyone recreating this cake. Use the gram measurements, not the cup measurements. The sugar and oil were off. Luckily I noticed the consistency wasn’t the same as the video so I ended up tossing the sugar and oil and re-measuring it using grams instead of cups and it worked. Also the 1tbl of vinegar did not create any thick consistency in my milk, so I added a 1/2 tsp more and it curdled a bit but not to her extent. Will update when cake is baked.
