Your whipped cream in Celebrations is divine! Used it to frost cookies. Also made the cranberry gingerbread cake and replaced the coconut sugar with date sugar- tasted perfect. Being a little crumbly on the bottom I made the rounds into a trifle with the whipped cream and topped with the cranberry compote. It was wonderful!

It's really sad that you do not put the full recipie and do not even say the measurements. I understand that you have a book but anyways YT is worldwide, and from Barcelona and I'm not gonna buy a whole book for 1 recipe. Delicious and ella, is also a book seller but she puts the whole recipie in YT!

I've been cooking and baking forever, not new at this, however- I attempted to make these, did the recipe from your book, Celebrations, to the T, however, they didn't bake through completely and they were very toasted from the bottom, so they didn't bake through in between. Any suggestions or tips are greatly appreciated. Thank you beforehand.

Hi! Usually, when I bake something and it bakes more - toasts, as you say - on one particular side, I have to change the position of the rack and make sure it's right in the middle. Hope that helps!

Hi Danielle, Just last week got your Celebrations cookbook and made the salted caramel-chocolate panna cotta page 83. I´m Finnish so when it says on the recipes, divide the chocolate mixture evenly among 4 ( 16 ounce) glasses, I was not familiar with the measure ounce, but likely you have the conversion chart on the back of the book and 16 oz is 454 g. I don´t have glass that big, then I realized that you probably mean 6 ounce glass?? Is there spelling mistake in the recipe? BUT I MUST SAY THAT THE SALTED CARAMEL- CHOCOLATE PANNA COTTA WAS REALLY GOOD, I will be making that again. Thank you for your amazing cookbook.

yes it would be a 6 oz glass! Glad you liked it!

What would be a good GF & nut free alternative to the almond flour?
@Againstallgrain8 жыл бұрын
You could try substituting finely ground raw sunflower seeds in a 1:1 ratio, but add 1 teaspoon lemon juice or apple cider vinegar and decrease the baking soda by half to prevent the baked good from turning green! You could also try cassava flour.

Hi there. I was wondering why you let the dough sit for 30 minutes in the fridge (in your book on page 88 - the one with the eggs) but you did not mention letting it rest in the video. I thought when apple cider was added to something with baking soda that the chemical reaction began immediately and you would want it to be baked right away. Any advice here? Thank you kindly!
@Againstallgrain7 жыл бұрын
I usually let the dough sit so the coconut flour can absorb some of the moisture. 30 minutes is ok for the baking soda, but I wouldn’t go too much past that. It will have a reaction with heat as well.

having had Ulcerative Colitis for 4 years now, I knew there had to be some form of help, answer and I just found your FB page a day ago. I have on my Kindle your "Celebrations" book, but got caught up in viewing youtube. I was diagnosed this last June with Type II diabetes, so I've been on a mission to lose weight and get healthy. My only son who was 33 died June of 2016 and in my grief I comforted my self with food, especially pastry and just about anything I thought would help soothe the terrible ache in my heart. But the food was not the answer, it just drove my diabetes higher. So. fast forward to know and I just found your FB page, website, and have on my Kindle your Celebrations book. I'm the kind of gal that wasn't all the books you have published. I've been doing a Bone Broth Diet Protocol, when it comes to the phase of 80/20 maintenance part of the program. I feel like I'll be more prepared with your books. I don't eat any pork or shellfish, no dairy, nuts/seeds/nightshade. I've had people ask what do you eat, it's been difficult to explain. Oh, yes and I've been cooking with an Instant Pot for about 3 months now. I have tools that will assist me getting even healthier. Thank you for sharing your story. and letting me share a part of mine...oh I am 67, so I have to get busy getting healthy!

Great video! I have two questions. 1. How many calories are there in one roll? 2. This recipe seems different than the one in the Celebrations cookbook. Could you post it? Thanks for all the awesome yummies! From a mom of a UC kid.
@Againstallgrain8 жыл бұрын
There's a link in the book to download all of the nutritional data! And the only difference here is I used the Sticky Bun Dough from the Easter section, according to the note in the beginning of the Cinnamon Roll recipe, as we do not need to be egg-free.
@pattymagee96278 жыл бұрын
This recipe is different from the recipe in the celebrations cookbook that I bought. The one in the book uses cashew butter and his seeds instead of the almond flour. I was disappointed that the recipe is different than in the book.

Patty Magee hi patty! I just bought the Celebrations cookbook and wanted to share with you that this actually is referenced in her book! She says that if you don’t need a nut or egg free recipe, use the recipe for caramel pecan sticky buns in the Easter section. That’s the recipe she’s using in this video. She mentions in the video having a nut and egg free recipe in her cookbook and she’s referencing the cinnamon roll recipe. I hope that helps!!

Can we replace coconut powder with something else?
@Againstallgrain6 жыл бұрын
Coconut flour is pretty difficult to sub because it's so absorbent but I've found that cassava flour or arrowroot can be good stand ins. It just takes a little trial and error to figure out how much of it you need to sub because it's not an even 1:1, and varies by recipe!

Doesn't Ghee have dairy in it? Or does it not?
@Againstallgrain7 жыл бұрын
Ghee is made from clarified butter, which means that the milk solids have been almost entirely removed, leaving only the healthy butterfat behind. Very pure ghee is 99% pure butter oil but may have trace amounts of casein and lactose. Unless you are extremely sensitive, it normally does not cause problems, even if other dairy does.
@c.m.12485 жыл бұрын
How is it 'keeping this dairy free' when she put melted ghee? which is from milk?
@Againstallgrain5 жыл бұрын
Ghee is actually considered to be 99% lactose and caesin free. The recipe also indicates you can use coconut oil. 😉

I was absolutely going to purchase your book once I saw the cinnamon roll recipe, but I was very disappointed (and felt a little deceived) that you did not include the recipe for the frosting and the exact amount of arrowroot for the rolls, OR the sugars/ghee/cinnamon for the middle. I understand you want people to purchase the book, this is your livelihood and expertise, but from a patron's perspective, and also a person who markets online as well, in my humble opinion you would gain a lot more trust and loyalty with your audience if you gave a little more rather than holding back. Of course not all the recipes but giving bits and pieces from a recipe is a real let down. It's 2 days before Christmas and I cannot get your book online in time to make this wonderful recipe for Christmas morning, and our bookstores do not have your cookbook in stock.
