I have 3 of your books. Love them. Also, I tried this crepe recipe for the second time, (1st was not so good), any how today, they came out FABULOUS.... even though I have the recipe in your book, watching you make them helped me see how to twirl the pan while pouring the batter. Happy dance in full effect. :-)...

I made these from your cookbook and they were fantastic! They're a great grab-n-go with almond butter spread on it as I'm rushing out the do to go to the gym. Also great as any wrap in lieu of tortilla. Thanks Danielle.

i'm a vegan and I bought. your book against all grain, because it has amazing recipes in there. Its the closest i found for my grain free vegan diet. I sometimes substitute eggs for flax and it kinda works. Please make a vegan version of your book. Thanks for your tasty recipes!

I have and electric crepe maker. You put the batter in a shallow pie plate and dip the bottom of the hot crepe pan into the batter then you turn it over onto the electric burner. Do you think this batter will work with the maker?

Hi Danielle! How hot should the two pans be? I heard a sizzle when you poured the batter in, so I'm assuming pretty hot, but I also know how quickly grain-free things can burn! It seemed like those pans pre-heated for quite awhile before you started, though.

Anything I can sub for the coconut flour? My son is allergic. Would it work as well with Cassava flour? or quinoa flour?

Unfortunately, a sub wouldn't work! I very rarely ever suggest subbing anything for coconut flour as it performs much differently than any other flour on the market because it's extremely absorbent. I would suggest looking for another recipe. So sorry, Lori!

I normally make crepes with regular flour and store it overnight in the fridge for the next morning. Does the lack of gluten effect this? I ask because I’ve found when I do gluten free dishes it can be finicky to get the same effect I would get in the regular version of a dish.

You can put them in a ziplock with parchment in between each one in the fridge for maybe about a week, or you can throw them in the freezer!

+Danielle Walker How do you reheat them? I'm going to try making them for a crepe bar to serve at my daughter's graduation party so we will be making a lot of them. However, I have never made them! haha I'm fairly nervous about making ahead, freezing them and then reheating them. I was hoping to keep them warm in a cheffing dish, but would love to hear any ideas or insight you'd have. Thanks so much for everything! Looks delicious. I would like to make comment though about your recipe. A good choice over the palm shortening could be coconut oil (which has little to any flavor). I say this because the palm industry is decimating the rainforest and pushing orangutans towards extinction. Thanks for the recipe.

There is quite a bit of controversy surrounding the palm oil industry, so be sure to purchase this oil from sustainable and eco-friendly sources, such as Tropical Traditions or Spectrum Organics. You can usually find Spectrum Organics at most any health food store and it reads "All-Vegetable Shortening" on the front, but the ingredients are 100% palm oil againstallgrain.com/category/shop/ingredients-grocery/

The Chinese make a crepe by only using eggs which are scrambled and poured into a hot buttered pan thinly which is gluten free and keto friendly.

Stick blender territory. Coconut flour gives me heartburn. Nice that you make your own flour though. I don't buy gluten free flour mixes unless they are bargain discount at the grocery outlet and then I end up mixing them with other flours anyway to perfect the blend. I need a flour blend that won't tear for this. So starch. I think tapioca (asian market) is a little more available and cheaper than arrowroot. Also letting the batter set for a while and using a (stick) blender seems kind of important.
