I had to add about 2 cups more arrowroot/tapioca starch to make it thick enough. They came out good.

Would you be able to use freshly grated Romano cheese instead of Parm, because being sheeps milk it's easier on my stomach? Also, could you just place all the dough into a bread pan (loaf pan) and make the entire thing a loaf of bread instead of rolls?

I think Romano cheese would work- and I have not tried it as bread. I have put them in muffin tins and they come out really nice!

I wish I could share my picture on You Tube of how my batch came out. They are exactly like yours! They are also almost gone because they were absolutely the best thing I've ever made since going grain free several years ago. I can luckily still eat cheese, so, 'nuff said. I halfed the recipe, used butter not ghee (same difference if you can eat dairy...), and I hand mixed because it's just as easy. Also I did have to add in extra Tapioca Flour because the dough was quite sticky, then I used a spoon to drop balls onto the parchment. Thank you for this wonderful recipe that I will make again and again!

LOVE! Like others mention, one additional good cup of arrowroot or tapioca is needed, or maybe 1/4 cup ghee instead of 1/2, try that next time!

I made these recently, and the dough was so sticky I added another quarter cup of arrowroot. It didn't help, but I was able to scoop onto my sheets. They are DIVINE!! But I am wondering how to get a firmer batter? I believe I followed the directions exactly (I did use pre-shredded parm, though). How would you adjust the fat to make a cheddar version?

Could this work with almond and coconut flour knowing that the flavor won’t be the same but could I get a good texture with these two flours?

Unfortunately, no. Arrowroot plays a key role in this recipe! They simply will not work without it.

I think it would work, there's already dairy in this bread anyway, so why not? I used ghee instead of butter and they are delicious!

If you aren't allergic to nuts try cashew milk because of the fat content. I've also seen other recipes that used almond milk and soy.

I've just recently found that I have to change my diet do to Gut issues. I cant have Dairy as well and I am allergic to Coconut, what would you recommend for an alternative?

it depends on the recipe! This recipe unfortunately does not have a sub for the dairy. I have lots of dairy-free recipes on the blog and in my books many that do not have coconut in them or can easily be substituted! My family is dairy free and I thought your recipes were that as well. Are you using real parmesan cheese because there is no substitution or will this work with the vegan cheeses?

Hi! You are correct - my recipes are either dairy-free or can be adapted to be dairy-free easily. If you cannot tolerate dairy in any form, you can utilize a vegan cheese of your choice - enjoy!

The cheese we brazilians use here is more like sharp cheader cheese. Mozzarella is not the kind of cheese to do it.

Many of my followers can't tolerate lactose, so coconut milk is a stand in for the dairy milk. You don't taste it a bit!
