brings me back to my childhood in the NWT, watching my Granny make her bannock. My Granny always used lard- never shortening, never oil, never butter. Sometimes she would even pan fry it and sprinkle it with brown sugar. So good!

@charley388 Yeah, the texture is similar. Traditionally, bannock was made on a fire on a stick. I have clips of that too.

We call them scones in Australia and damper when made as one 'loaf.' Most of the bushes and stockmen lived on damper and wallaby stew. We also used to throw balls of the uncooked dough on top of a bubbling soup and they would swell up and make light fluffy dumplings! Yummo.

I don’t think I have ever seen bannock being made that way before… I should try it when I get the chance, but I’m still experimenting on the frying pan (in an attempt to replicate my late grandmother’s recipe)

I had damper in the Outback, made and baked in an iron dutch oven with coals on top and served with golden syrup. Very good!

*laughs*.. she said you don't ever cut it with a knife. .. The older guy at the end, probably her husband, used a knife and cut it open! So funny! This was a great video and they loooked so good. Definitely putting this on my list of things to try.

+ShelliKittens She's right about using a cold knife on a hot biscuit. It makes the center gummy. Once it's cooled off, a knife is OK.

was cool we cook bannock different, we use fry oil and i learn how to cook bannock since i was a kid lol but i enjoyed this video :)

Also, my Granny would die laughing at me if she ever saw me use a Cuisinart to blend the dry ingredients! (don't get me wrong though- I'm totally going to use one!) She never used a recipe either. She just knew by looking at a coffee mug how much to add of everything.

I use lard and milk too but I add a bit of sugar and raisins to make a sweet bannock.

If you cut up the lard into small cubes and freeze it the dough doesn’t get warm so you can make the bannock by hand. I don’t own a food processor.

I tried to make this bannock but extracting beer fat from my Budweiser and Kokanee beer seemed almost impossible.! It seems the fat is with'in me. Any suggestions?

You can call it whatever you want to. Bannock is a general term for a bread that was made in the bush. Most times it was wrapped around a stick and cooked on the fire. Trappers found it convenient since the ingredients were easy to pack.

well you better find an aboriginal word for it because Bannock is Scottish/Northern English and real Bannock comes from there... otherwise it is not really Bannock.
