Robert H. Lustig, MD, MSL, is professor emeritus of Pediatrics in the Division of Endocrinology, and Member of the Institute for Health Policy Studies at UCSF. Dr. Lustig is a neuroendocrinologist, with expertise in metabolism, obesity, and nutrition. He is one of the leaders of the current “anti-sugar” movement that is changing the food industry. He has dedicated his retirement from clinical medicine to help to fix the food supply any way he can, to reduce human suffering and to salvage the environment. Dr. Lustig graduated from MIT in 1976, and received his M.D. from Cornell University Medical College in 1980. He also received his Masters of Studies in Law (MSL) degree at University of California, Hastings College of the Law in 2013. He is the author of the popular books Fat Chance (2012), The Hacking of the American Mind (2017), and Metabolical: The Lure and the Lies of Processed Food, Nutrition, and Modern Medicine (2021). He is the Chief Science Officer of the non-profit Eat REAL, he is on the Advisory Boards of the UC Davis Innovation Institute for Food and Health, the Center for Humane Technology, Simplex Health, Levels Health, and ReadOut Health, and he is the Chief Medical Officer of BioLumen Technologies, Foogal, Perfact, and Kalin Health.
At the end of this activity learners will be able to: 
1. Differentiate between food science, nutrition, and metabolic health.
2. Explain the three precepts of metabolic health: feeding the gut, protecting the liver, and supporting the brain.
3. Analyze why ultra-processed food is currently not considered food but could potentially be re-engineered to promote metabolic health.

Been watching Dr. Lustig far awhile, Dumped Ultra processed foods and seed oils, made a world a difference in my health. Praying he will be able to force Government to stop High Fructose Corn Syrup out of food sold in this country. Force truth of seed oils being toxic out of food. Thank you far the work you do.

I am the one person of many, who have suffered threw, the pain of toxins sprayed on farmland, I have asthma, up until 3 and half years ago was living in Moultrie Ga. One of the farming communities in Colquit county GA. southern part of state. In the fall of year, cotton crops sprayed from air by crop dusters to kill all the leaves and make them fall off before harvest. In the spring time huge amount of herbisides sprayed on land far food crops, peanuts, tomatoes, cabbage, peppers, sqaush, many more foods planted on large scale contracted to big food companies. Tried my best to stay inside as much as possible. These toxins where putting me into respiratory failure. In 2011 had to go on disability. Lost my job after third time in hospital with pnuemonia, was terminated far no longer able to do my job. Dx of COPD, had smoked earlier in life, doctors said because I used to smoke, far 9 years in hospital every Spring and Fall after severe resperitory distress where my lungs would fill with fluid. Think it was 2015 pulmonologist told me about shot that was to make COPD get better, That was a bad mistake. I was on Xolair far about a year, This is one of the toxic Biological shots made in Wuhan China did not no side effects of this drug, had not been told. Started having awful pain in upper abdoman. CT scan showed mass of 3 centimeters in neck of pancreas. At that time read up on Xolair shot. I was never a Canidate far this shot to begin with, long history of GERD, had to have Neilson surgery far Hieatal hernia of stomach, halt of it had moved up into chest cavity, also issue of already having thyroid nodules. They wanted to do Whipple surgery on my pancreas, At that time having issue with CHF, not a canidate far surgery. With Xolair shot stopped. a year later mass in pancreas had gotten smaller. 2 centimeters, last scan shows it is now just 6 millimeters, has almost gone away, one bright spot far me. My thyroid is distorted with large number of nodules, have had needle biopsy of couple of them to check far cancer, so far came back clean. Last three years have been living in Greenville SC. This is hill and mountain country, My lungs have improved, only have to use oxygen at night, it drops when laying down, only had 2 flairs since moving here 3 and half years ago, bad but have not had to be in hospital. With dx of Diabetes, have determined that with only eating clean food, I will keep on living and make the best of my life that I can. I refused statins along time ago, they caused sever pain in my muscles. Also refuse any meds far high cholesterol, tried a couple of them far a few weeks, had same side effects of muscle pain. @@ActivateMission2ThisTimeline

Dr Lustig is the equivalent of Quentin Tarantino in the medical world. Dr Lusting is a giant , championing the cause of good health and nutrition. A hero to me

I think this may be the most important point, at 11:48 *1 Food science is what happens to food between the ground and the mouth.* *2 Nutrition is what happens to food between the mouth and the cell.* *3 Metabolic health is what happens inside the cell.* *But it's only what happens inside the cell that leads to all of the diseases of metabolic syndrome. All the diseases that are driving those health care costs, type two diabetes, hypertension, dyslipidemia, cardiovascular disease, cancer, dementia, fatty liver disease, polycystic ovarian disease, all of those are the diseases of mitochondrial function.* *And that's why everyone has cardio-metabolic diseases is because they have mitochondrial dysfunction and that is what metabolic health is all about.* You get your mitochondria from your mother, and everyone knows if momma ain't happy, nobody's happy. Take care of your mitochondria and they'll take care of you.

Intermittant Fasting and keto eating enables autophagy and mitophagy .....Exercise also allows new mitochondria.

@@harvinderubhi5540 no joke my man, it's my third week with zero sugar. The way I can put it that it remove also weakness from my life. I'm either alert or want to sleep, I'm calmer, sharper, lost inexplicable 6 kilos (about 12 pounds I think...) a lot from water retention for sure, and I'm not doing diet. Just cooked everything that I've have eat for this period. There was some hard craving, it's much better now.

I was interested in levels,am a spendy person, and am interested greatly in nutrition ands health, yet the price of levels was too much for me. Just some feedback since Dr. Lustig is invested in it

So I’m a T1D… and have been for over 40 years…. I can’t bear any carbs…. Drives my bloody sugar crazy…. I’m eating carnivore diet to manage all of this, quite successfully… so fibre… any fibre comes bound with carbs, by definition…. So what should I do if anything…. I feel fine, get plenty of exercise, get “good” sleep and my bloody work is peachy…. Is my microbiome buggered or successfully adapted… so does fibre matter for me?

I'm sure I don't know the answer to your question, sorry, but I have been wondering too about how valuable fiber in the diet might be for a carnivore. Specially would they be more prone to autoimmune disease? Dr. Georgia Ede eats a carnivore diet and feels good. Seems logical that if you feel fine function well then all is well. I am not diabetic but do not tolerate sugar or high carb foods.

Consider the Inuit when they lived off the land. Fibre was not added to their diet and they were carnivore for the most part. They were incredibly healthy and were often studied ( by Queens university) to determine why they were immune to cancer!!

Disclaimer first, I'm not an expert in the field. In a different video interview with Dr. Lustig this question came up. His explanation was that in the absence of high fiber in a diet, the mitochondria can munch on other things and be just fine, even though it "prefers" fiber. That was in the context of all other things being equal though, meaning that you are also NOT consuming added sugars (especially high fructose corn syrup) or refined carbs that quickly convert to glucose, or other processed crap. Also, fiber's benefit of being able to slow down absorption of glucose becomes less important I believe if one is not overloading with sugars and refined carbs to begin with, which is basic to a carnivore diet lifestyle which I also follow for the most part. I have some complex carbs in the mix but only from real food and in moderation but NO processed-packaged meals or snacks of any kind. Again, I'm not an expert nor do I play one on TV, unlike some individuals on KZbin but Dr. Lustig is the real deal in my opinion.

I believe Dr. Chaffee has a video called "We Don't Need Fiber" or something like that, which goes into the science of it. If you do a search on KZbin, I think you'll find that a lot of carnivores have addressed this question. My own answer would be that if you feel great, that's all you need to know.

I can't get rid of pain I my right knee slightly below my knee little to the left and I am doing great on my diet I had only 2 meals yesterday that 2 days only 2 meal trying hard

I had test and have high visceral fat, high subcutaneous fat. I am apple shaped too. It was the kick I needed and I have taken added sugars out of my diet. I started to get headaches! So sugar must be profound drug

What about sweeteners that are like Stevia, monk, fruit etc. those are sweetener alternatives that are not diet sweeteners or are you finding like Diet Coke or sugar-free Coke

Because your tummy expands , as we fill it up , its a delicate process, pay attention & u will notice getting full , & stop eating, if u be pushy with it, it expands & depending on us how much it expands. y u don't be pushy with it , it traps you! 🥦🥑🥭🍉 y veggies are nice & low fat ! 💝

Inulin is a long chain of fructose molecules, which are really really bad for you- Dr Lustig and others go on about Fructose at great length. Inulin is 100% bad sugar with no redeeming qualities.
