In this video I will show you how to make a mouthwatering patatopita, a traditional Greek potato pie bursting with flavor. We'll combine creamy leeks with fluffy potatoes encased in a flaky crust for a comforting and satisfying dish. Patatopita is perfect for a vegetarian main course, a light lunch, or even a savory breakfast. It's easy to make and even easier to devour! So grab your potatoes, leeks, and some filo dough, and get ready to bake up a Greek masterpiece!
INGREDIENTS:
1 kg potatoes
1 litre of hot water
2-3 leeks
120 g of grated cheese like graviera/gouda or 50 ml of olive oil
30-50 g of sun dried tomatoes in oil
2-3 small tomatoes
parsley
salt and pepper
baking tray 25x35 or 32 cm diameter.

To make it a fasting recipe you can omit the cheese and add some olive oil. I've tried it and it is delicious.
