I was getting poor scores on my practice tests and realized that I was not utilizing paragraph structure or overall organization in my writing. Kind of nuts how I threw years of writing behaviors out the window because a 30-minute timer freaks me out.

This should help get you started! magoosh.com/gre/gre-reading-comprehension-practice-the-new-york-times-the-atlantic-the-new-yorker-and-more/ High level journals like in that article are great, and very GRE-like. However, I also think it's important to read books, even novels, since they're easier and you can read more without getting bored or tired. My suggestion is to pick material you enjoy :) it all helps! So reading material that you like will help you engage with it more naturally. The important thing is to be reading, it matters less what you read!

No, there is no strict word count. However, you will want to shoot for at least 400. Anything less than that and it will feel undeveloped, which will not earn a good score. It's always better to try to write more, so long as you are writing quality thoughts.
