The best tartar I ever tasted had the beef cut into tiny diamond shapes. The difference was huge! Texture makes such a difference and actually changes the taste.

Yeah, when I was a kid and my mom was cooking ground beef, she'd let me have a little bit of it raw with some salt. I loved it. I still think raw beef is delicious, but digestively it's kind of a coin toss for me.

Personally i love my tartare plain as possible. Salt, pepper and egg yolk nothing more. People like mix in all sorts of things but i prefer meat taste rather then onion/capper meat salat.

Ancient original thing was plain meat beated to pulp under saddle of Tatar riders but as modern dish it is always mixed with condiments. Semantics aside i like it simple thats all for rest iam not right person to discuss originality, name, recipe etc. and frankly i dont care maybe technically name is wrong but most of the world know.

Has anyone ever put thin slices of avocado on their tartare with the raw egg? I could see the two fats complimenting each other, and really driving the tartare mixture up.

I like it classic with not too much seasoning but I have done that it's pretty good! Fan (thin slice) the avocado then line the tin cutter with it so it covers the inner side, then put the tartare mix in and remove. It really looks spectacular that's for sure👍 I recommend doing the same technique but with shrimp cocktail salad and top with greens, it's a head turner for sure and it tastes amazing!

I have, you have to make sure to go super super thin in my experience. Avocado can actually be a really overpowering flavor when mixed with another fat. You are right though, if you get the ratio correct, it really drives the tartare up a notch.

The chef here has (correctly) assumed this video to be watched by a mostly western audience, and to western audiences, a fish sauce is much more a tangible concept than garum. He used that concept to branch the connection to garum, as a comparison only, not as a direct mapping. You likely know this but are being deliberately obtuse about it
