These turned out fantastic with my homemade gyros. I found that rolling them out and letting them rest before rolling them out again led to the thinnest pitas. You can also roast them in the oven and make pita chips!

A nice variation on the pita is to put some oregano in the dough en before baking sprinkle some sea salt on top

Love your recipe; will try this next. I made your Koulouri Greek Bagel. Turned out great. We have a store in Baltimore, MD. Prima"s that carries everything we need. My first taste of the Greek Bagel was from them. I found that they bake them but get them frozen shipped from Greece.

If you don't have $$$ for a mixer, you CAN knead the dough yourself, but be prepared to do it for 10 minutes. Impossible for arthritic senior citizens like myself, so we have to buy at the store, or do without.
