I just made this an hour ago. Since I'm kinda in a hurry, I only proofed it for like 40 minutes, and yet the bread still turns out great! The recipe was soooo simple and easy. I made this just now. The dough didn't rise much but I continued. It turned out fluffy. I stuffed three pieces with shredded mozzarella and chopped coriander leaves, then brushed garlic butter on both sides. So delicious! I kept four pieces in the fridge for tomorrow morning.

I used only water (as i was out of milk) as well as using 13 grams of salt instead of 8 and it came out so perfect, also added dried parsley flakes to the melted butter😋

@@KitKat-tj3ts Yep, bazlama is a thick type of bread. The thinner one is called "lavash (lavaş)" and a way thinner one is called "yufka". I think what you are mentioning is lavash.

*Written Recipe in English with Ingredients:* Pour 160mL warm milk, 160mL warm water, 10g yeast, and 10g sugar into a bowl. Mix. Then add 500g plain flour and 8g salt and gently mix. Then knead with your hands. Add 18g/3tbsp olive oil and knead the dough again until incorporated and smooth. Shape the dough into a circle and place in bowl. Add a bit of olive oil on top so it won’t stick to the plastic wrap. Cover with plastic and keep it in a warm place until it doubles in size (36-40C / 96.8-104F), about an hour. Then remove from the bowl and divide dough into 6 equal pieces. For each individual piece, fold it inwards to release the gas, then make it round. Cover the balls with plastic wrap so they don’t dry out. Take one ball and sprinkle some flour and flatten it out with a rolling pin, shaping it into a circle (18cm/7inch diameter and 5mm/0.2inch thick). Repeat with each ball. And then cook on stove (see the directions around 3:40). Once cooked, take bread off the stove and brush with unsalted butter or olive oil and sprinkle with parsley.

@@fathiahussein6049 When the dough has rested, devide it in to parts (I devided in to 8 parts ) and then start rolling the pieces of dough in to the flat bread shape, after that scoop one tbsp of the filling place it in the centre of the dough, afterwards close the dough around the filling (it will form a ball again), gently roll it out , and voila! The bread is done 😀

I made this bread and it looked exactly like yours, but it didn't puff up to a ball when I cooked it. It remained completely flat. Even when I cut it in half, it was completely flat inside and hadn't separated to hold any filling. What did I do wrong?

Good fresh yeast would help also make the dough very soft, must be sticking to your fingers after it has risen. Allow time to proof before putting on a heated hot pan or plate to cook them.

I'm making it right now and leaving it to rest. I think my arm is about to fall off from kneading the dough 🥲 Update: The dough raised well. But it was not as smooth as the video. Also, it turns chewy and crispy, not soft. I think it depends on the quality of the ingredients. Also, i rolled the dough thinner because i was afraid it won't cook well if it's thick. I slice the cooked bread in half and spread garlic butter, and grill it. Overall, it's yummy, but i hope it would be softer instead of stiff and chewy.

@Ogün i tried with low heat and high heat. Both had the same textures when cooked, but higher heat puffed up the bread better. I was using high protein bread flour, hence more glute making it chewy. I think it also has to do with it. I will try with AP flour or cake flour next time 😁

@@asifkhodu4543 I tried the recipe tonight with AP flour. While cooking the bread was crispy and not fluffy. I couldn’t get it to puff. I think it has to do with the right temperature. I tried high them low and still the same. However after cooking the bread I covered with a tea towel and that seems to help make the bread a bit softer but the texture was chewy which I like.

Why don't you let the warm milk and warm water, yeast and sugar bloom up to a foamy stage? A lot of dough mixtures are made without letting the warm water and warm milk and sugar bloom. I know you have the answer, but I would really love to hear your answer on this question. I love your channel and am so glad that I ran into it. Thank you for all of your great recipes. ❤

Thank you for sharing the recipe. I tried it today. It came out well for a first attempt. The one thing that didn’t happen was the puffing up as it cooked. It was soft and fluffy though. What would make it not puff up?

I just cooked it exactly according to the recipe - during frying, the cakes did not rise (as in time 4:17). A pocket did not form inside, I do not know what went wrong...

You maybe kneaded the dough for to long. The yeast won't really work after.

Hello from Mesa,Arizona USA. Thank you for this video. I have wanted to be able to make these wonderful breads but was afraid to try it as I am a fairly good cook but not so good with baked things. I made a batch of these yesterday for my daughter and they were fun to make and soooo good. I plan to make these often as a breakfast and snack bread. 💃💖😍🤗
