I looked into Jamie Oliver. His whole career is built on instructing British people who have never tasted anything spicier than salt (and MAYBE pepper) and who barely understand boiling water, how to cook food with more flavor. Albeit with baby steps. So don't see these recipes as being tragedies of nature. But dumbing down to the lowest possible level.

@@Lightscribe225 the problem i have with this is that he chooses to add unnecessary steps which over complicate things. His green curry is one example, while it might not have much all he needed was the curry and chicken, but he choose to add mushrooms, and not just one type but multiple types, he then added snow peas which are also unneeded, if he really wanted to dumb down these recipes then both of these steps should be removed to make it easier on people.

He was on the first celebrity chefs to hit the main stream back in the early 2000s mostly because he was charisma enough to host a show, he basically got scouted when he appeared on a show about the restaurant he was working at, you can find it on youtube and Jamie really stands out as seeming really relaxed and comfortable talking to camera and explaining what he's doing. Some producer most of spotted that and gave him his own series. Here's a fun fact, in the early and mid 2000s there were a bunch of cooking shows, but there were 3 big names that were rising up had multiple series on british tv at that time, Jaime Oliver, Gordon Ramsay and Heston Blumenthal, Heston was my favourite to watch for his crazy food science stuff, but he stopped appearing on TV around the mid 2010s. Two of these men who all had multiple shows airing at the same time, run multiple Michelin star restaurants, in fact both of them operate a 3 michelin star restaurant right now, Jamie oliver on the other hand has never won a michelin star.

To be fair, the recipes would have been "too spicy" for them. Someone made a post about a 1980s gardening book they found which included some recipes, and it recommended rubbing a garlic clove against the sides of a wooden salad bowl, and to also drop one (1) unpeeled clove into your casserole or stew and then remove it so that the taste wasn't as strong.

I think that the idea that Europeans didn't go for spices is not historically true, because they legitimately did highly value these spices. You don't make global empires and enslave natives on plantations to acquire spices unless at least SOMEONE back home WANTS it. But it's definitely the case for a number of modern people that spice is not something they can handle easily, and even more so for hot spice like chili. I do not know what happened between then and now, but the more and more people keep saying this stuff, the more and more curious I get as to whether something actually changed in that time, or if it's just a degradation in cultural tastes.

tbh, as someone on a diet, I get it with the chicken breast. It is much healthier and it's not like they are THAT much more expensive than a good amount of thighs. It's just white meat pretty much, which is healthier of course. But I get also if a dish calls for a thigh or leg instead. As they are the more flavorful pieces. I think I figured it out. Jamie Oliver is only using French techniques for ALL cooking. He's adding water to de-glaze the pan for "more flavor" (which does work in French Cooking) but he's FUCKING IT ALL UP because FRENCH COOKING TECHNIQUE DOES NOT WORK WITH WHAT HE'S MAKING.

I actually made a buttered chicken like dish, had to modify it slightly as my mom can't have rice. Even I, an amateur cook, seasoned my chicken properly. Yogurt, garamasala, garlic, ginger, a bit of cumin and a pinch of cinnamon with salt and pepper. I slathered the meat with it overnight and popped it in the oven the next day

The moment I saw him put in the cashew butter, I just knew that Jamie wasn't gonna put any actual butter in the dish. Like you can tell he arbitrarily decided the "cashew butter" was all the butter he needed for the *butter* chicken.

Uncle Roger is one of the most studied chefs and even though he does a lot of videos as a bit and for humour, he approaches every video with an informed cooking perspective and understanding of the subject matter. I do enjoy learning about the differences in Indian cuisine, and there was a place I used to love when I was younger was a shrimp goa curry which was freaking amazing, but was also really spicy. Kinda sad that it went under new ownership and then eventually moved locations. I've yet to find a curry place where I live that hits at that same level since.

Jamie Oliver is the absolute example of a chef who learned how to cook in the style and in the ways of one way of cooking, in his case Italian, and deciding that clearly all cuisine works in a similar manner. If what he wanted to make was an Italian style chicken and tomato pasta, not any particular recipe just his version of an Italian chicken and tomato dish, a lot of what he does here makes more sense (outside of the marinading for 10 minutes thats just silly). But selling this to the public as an Indian dish? No. That is incorrect.
