Hi Greg. Adding vinegar to the water doesn't make the eggs easier to peel. What it does do is raise the acidity (lower the pH) of the water. As a result, if any of the contents of the egg escape the shell whilst it still soft, the slightly acidic water causes the egg to coagulate and stay together; so you lose less, if any, of the egg.

Also what makes the egg easier to peel was he instantly soaked them under cool running water after a boil shocking the egg shell due to rapid temperature decrease

@@apexpredator9021 That's what it is, vinegar added in large amounts taint the flavour of the eggs. I was always taught to put boiled eggs into cold water as soon as they are boiled, this makes the egg white pull away from the membrane under the shell, making them easier to peel.

Also interesting fact I heard recently: the whole concept of bacon and eggs for breakfast was invented by an advertising agency. Story goes that in the 1920's an american company that sold pork products was looking for ideas of how to sell more bacon and the guy they hired came up with the idea of bacon and eggs.

Those peacock eggs look very nice greggo! I prefer to steam my eggs in about 2cm of water in a covered pot for 12 mins (from cold), they peel even easier!
