I have the larger Q with the same setup. It’s a personal choice, but I prefer the griddle over grates for burgers. And the clean up is hands down much easier with the griddle. Cooked Haddock on the griddle with butter the other day, outstanding. And that’s tough to do with the grates, if it can be done at all. Great video!

Great side by side test! Definitely a common question / which is better.? You’re results are spot on for flavor scientifically. The griddle burger with its larger crust surface creates a lock for the grease aka flavor, which absorbs through the crust as it has nowhere to escape. The grilled burger looses it grease / some flavor. Grilled loose a bit of flavor but also the good stuff that is bad for the heart. Both Great but if watching your fat intake the grilled is the better less flavor option. The filter is your body or the grill grates. Thanks for the video. Skipped our lake house visit in MI due to the lockdown order but will be there soon grilling, smoking and Frying.

Assuming both burgers were the same weight, I’d be curious as to their “ready to eat” weight? How much moisture is lost with these different cooking methods!

The patties were both made using the Cuisinart burger press, so they were pretty much the same weight. Would be interesting to weigh them before and after. Great idea for another video. Thank you.

I've cooked them both ways on the Weber Q but i have to agree with your assessment. I think the griddle always gives a more even cook to the burger. Even when I cook on the Weber charcoal kettle, I still use the cast iron hotplate, there's still plenty of smoke for flavour.

Nice video. If you ask for my opinion, most homes uses grill for burgers and steaks. Most restaurants and fast food chains uses griddle. Taste wise you be the judge. For easy cleaning afterward, there's no comparison. If you hate cleaning, stick to the griddle. For fun and outdoors, you're not bar-b-queing with the griddle. That would be a joke. Anyway I prefer the smoke flavor so grilling is definitely the winner for me.

I don't know if you monitor your uTube posts anymore but this seemed like the most recent one and so I used it to comment. I just bought a Weber Q1200 mostly due to your posts and I am well pleased with it. As I type this, I have a spatchcocked chicken marinating in your Italian marinade and will cook it under a brick just as you showed. The only thing I did different is I used my very own garden fresh, oregano, rosemary, parsley and garlic for the Italian seasoning part. I'll let you know how it turned out if interested. Thank you for doing no BS videos that are clear and encouraging. You seem like an honest person and is why I decided to follow you and get the Q Thanx.

Hello CEG, Great informative presentations. I have had my Weber Q 3200 for 3 years with some amazing results. However, always learning. Hence, I purchased a Griddle (we call them hot plates here in AUS) specifically to cook burgers. Thanks for your method. I apply olive oil and seasoning direct to the meat only. I agree with you, the griddle wins by a bees fart (not much). I also add wooden chips for extra flavor.Cheers John from Downunder.

First off, great to see the "Q" back in action. And great test of the grill vs griddle. Now my opinion of these two are that it's kinda apple's vs orange thing. You will get different flavors and textures with the two techniques. And like one viewer pointed out your burner isn't at it's proper burning level so it messes up the flavor compounds that would be created if burning properly. Both styles are great. @@GallaghersGrub sounds good. So again both have their own advantages. The griddle keeps the fats close to the meat so the meat is "frying " in it's own fats and let's face it, beef fat is very yummy. The grilling works wonderfully when the rendered fats drip onto hot coals or " flavorizor bars ( that's what Webber calls the metal peices above their burners ) or the hot tubes that your blue flames are coming out of. This creates complex flavor compounds that float back up onto the meat giving it more flavor. That's why it's important to keep all gas burners clean and properly working to get maximum effect. So I don't think of them as one being better than the other, just different. And I think that's kinda cool, or well HOT if you get meaning. 😄

@@kssaint6290 yuppers. However keep in mind how popular "smash" burgers are. So again it depends on individual tastes. Also what's available. Hard to do flame cooked inside a apartment. At home I'm normally doing steak. Check out his beer brats video, it was a couple of summers ago. It has changed the way I do my brats now. I can see your point, but I think a lot has to do with your fuel. I prefer charcoal and adding to the fuel a wood like mesquite. This gives the burger even more flavor.

Just tried out my Q griddle with burgers. Have to agree with you. The griddle burger has a slight edge over a grill burger. Glad you posted this. The secret to making a great grilled burger is to use a real charcoal grill - never a gas grill. Cook that burger over a real mesquite fire and there's no comparison.

I think they're equal. I tried this at home. I think the flame broiled burger absorbed the smoked flavor from he wood chips better, and it's probably a cleaner, healthier burger, because the fat drips off it into the flames. The griddle burger is definitely juicier, and more moist, because it swims in all that fat during cooking, but it doesn't trap the smoke flavor like the flame broiled burger does. They're both great, but it depends on what you're after, flavor or texture. The good thing about the griddle burger is that you can cook that indoors and outdoors. So, I can see how it gets the edge by a hair.

First let me say that I have found your channel again. I had looked for the Fire Escape, but now it is the City Escape. Great experiment, McDonald's and Burger King have argued this concept for nearly three quarters of a century. You settled it I guess. Maybe you could try it on the Weber charcoal grill, direct over coals and in a skillet. BTW I've had a it of time to study Chess,lately living like a hermit during the pandemic.

@@GallaghersGrub may as well use a thermometer to check the temp too. Would indicate if one should adjust cooking time. Yes you did a color test but temp test might be more accurate. Love my Q, bought it because of your older videos. I have 2 larger gas webers, a weber kettle and a kamado joe. The Q is hotter than the other gas webers and more convenient than any charcoal cooker. I would agree that on a kamado you could get a better result, but the effort is significantly more. Thanks for the vids!

Many years ago I got paid to cook burgers (and other stuff) on a charcoal grill, and a few years before that I got paid to cook on a flattop. I do smash burgers on the weber griddle. Every time I make them my guests are amazed how delicious they are! Reminds me of shake shack type burger. I'll never use the grill again unless I'm using charcoal.

When you add salt to the outside of the burger it draws the moisture out of the meat. On a griddle these juices then cook onto the outside of the burger and increase the flavour. On a grill they drip away.

My brother in law is an executive at in and out burger. We’ve had this same discussion and I believe strongly the grill offers great flavor but makes for a less juicy burger while the griddled burger is juicer and better overall!

Well but since your griddle is on an open gas grill you get the smoke circulated from droppings of the burger that was grilled. Hence you get the best of both worlds (smoke from grill, crust from griddle).

I think buying something like a Blackstone griddle is a great idea, especially for smash burgers and breakfast. I don't think it replaces a grill though, and I would always recommend a grill first and a griddle second. But that's me.

I agree with Keith Scott who also commented with regard to grilling on a Kamado. Kamado’s are expensive but if you are a serious griller and love good smoke flavor, that is the route to go. You sound like a great guy and everyone has their own taste buds but why would anybody ruin a great piece of grilled meat with ketchup. Put ketchup on fries. I really enjoyed watching your video cause being from South Texas, I am an avid griller.

First, Texas has the best bbq. I've been to Houston and Austin and wow! I considered a Kamado, but this cottage is only part time and seasonal, meaning I have to move my grills off the front deck to the shed in the back yard each time we come up here. Kamados are just too heavy for that so I went with the kettle. That said, I may be adding a smoker this summer. New comparison vid coming later this week. Thanks for watching.

The burger on the flat top benefit from being cooked next to the one on the grill which dripped its fat and created the barbecue smoke we all love. The flat top on its own though? Hmm.

Most times it can be just up to ones taste buds. Either way, I dont mind both. I still like mine over charcoal with some smoke.

I got my Q in 2016 by freak chance. I was walking down the street in Brooklyn and a woman was throwing it out. She just left it on the sidewalk. Said she was moving to Colorado and buying a big grill. It was basically brand new. Thanks for watching R T

I had mine since 2005 before it was destroyed in a car accident. Would've lasted longer if that wasn't the case. These grills are by far the best on the market.

Try the griddle burger smash style. Put your lump of ground beef on the pre-heated griddle with as little handling and forming as possible and then "smash" it down with a sturdy spatula or an iron smasher. Try to smash it to at least a half inch thick or less. Let it cook for 3 minutes and then flip (do not smash again) and go for anonther 3 minutes adding a pinch of sea salt and deli style american cheese. For added flavor I will spagehetti spriral cut a white onion and put a little pile of onion on the hot oiled griddle first before smashing the raw beef on top of the onion. So good!

The weber Q griddle is porcelain coated cast iron. The porcelain coating is helpful because you can use soap and water to clean it. As far as griddle vs grates, you just have to see what you prefer.

Is that the #6558 griddle? I heard food sticks to it pretty bad... Do they make a full size version to cover the entire Q 1200 surface?

Yes, this is the #6558. I like it. Small but so is the Q1200. I have not experienced any sticking issues. Weber does not make a version to cover both sides and they warn against using two griddles at once. I believe it is an airflow issue that could be dangerous. Check some of my other videos for a full review and other cooks with the griddle.

Interesting choice... the griddle was theorized to hold more moisture, but the griddle was treated to pre-oiling n-e-way??? I'd expect more carmelization due to the added oil.

The oil was to prevent sticking. The additional caramelization comes from more surface area touching the hot metal. Cheers a buddha!

I haven't used the Q2200, but the smaller Q1200 is great, so I'm sure this one is just as good, just a bit bigger. Still at a good price.

@@ScottDabson I've cooked a 10-lb pork loin in my Q1200. I guess your decision depends on how many people you're cooking for, and how much space you have in your vehicle if you take it on the road. There's a Weber Q facebook group too if you want to see what other people are cooking.

The grill burger is actually adding flavor to the griddle burger because it's juices are causing yummy smoke that wouldn't be there with just the griddle burger only.

Charbroiled over pan fried all Day! You can get a nice sear on a grate but they have to be close to the fire.

Gas grills just can’t measure up to a real charcoal flame. Do the grilled one on a Kamado type grill and you will never go back.

I like both but yes charcoal does taste better i just can't seem to get the hang of keeping a flame or I'm just to baked and no flame is needed just the heat from the coals

Perhaps a part two experiment could be a combination of the two methods, and you can still do two parties at once where they each start on one surface and are finished off on the other. Anyways, I enjoy experimentation/comparison videos like these, it's science cooking :), keep it up :)

In this comparison you are really missing out on the benefits of a griddle when it comes to making burgers in my opinion. SMASH burgers. Can't make them on a grill and you get so much extra browning from the maillard reaction. Two thin crispy and juicy patties with cheese between them and on top.
