I did a shawarma a year or so ago and I was happy in how it turned out. I basted mine with the juices every few minutes to keep it from drying out. I’ll bet yours was better though! Thanks for your vids and podcast. You and chelle are good people

Looks good! If you put a tomato or onion (or pineapple if you're doing pork) on top it will help prevent the topmost layer from overcooking. Alternatively, you can just pull it off and let it rest while the rest cooks. Heat rises; the top always suffers the most ;-) Great video as usual!

2yrs ago I got a Trompo King spit. I use it about once a month. We love chicken gyros, tacos Al pastor. I like to put an 1/2 sliced onion on top to sweat down over the meat. Potatoes in the bottom to soak up the juices. Mmmm. Looks like I’m about to pull the trompo back out.

When I first saw the vertical spit and you were talking chicken, I thought, how on earth is he gonna get a chicken on that thing? Well, surprise, surprise. Chicken thighs. Walmart had their rotisserie grill on clearance last winter. Got it for $20. First thing I did was make gyro chicken. Takes forever on that thing since it’s open air, but I have to try your recipe here. Opa! Also Walmart sells sauce bottles for $1 that are perfect for the Greek sauce.

Don't get me wrong, it does look good. Fairly similar to my kabob recipe but this type of device doesn't scale well. If I were ordering gyro at.A restaurant the outside is mostly cooked and then fully cooked on a griddle after slicing. Then what is beneath continues to cook. You can't do that on a little thing feeding a family so you wind up with an overcooked outside waiting on the inside to cook. Love your videos, keep it up my man!

The key to Gyros/Doner/Shawarma is the constant flame sear. The recipe looks delicious, however I would torch the meat after every slice of a layer. Or else I would slice then sear, which is easier.
