@nickma71 Ain’t that just the truth. This man is a legend in my opinion. The first time I saw him all I had was a &$@;)$ electric smoker. He changed my whole outlook on outdoor cooking. I’ve got a yard full of smokers now and I do some kind of cooking out there every weekend, hell or high water.

When I do my Greek style ribs, I add about 8 thin lemon slices into the wrap, on top and underneath the ribs. Unbelievable flavor!

The good thing about this recipe is you could smoke and wrap them, cool them off and then just grill them to bring them back the next day if you have an event you want to prep in advance for.

Malcom I watched this video, immediately ordered your greek seasoning, the jerk seasoning, and one of the chupacabra seasoning blends. I had a three-pack of baby back ribs so I did one in your greek seasoning, one in your jerk seasoning, and one in just your standard bbq rub. Followed all your steps for each one but of course each one had its own sauce. They all came out amazing!!!! Thanks so much bro!

I used this technique last night, mixing up my own Greek rub with fresh lemon zest. I've got to say that this may be the best way I've ever had ribs. Such a far cry from the typical red, sweet BBQey style. The rub and vinaigrette for these is also almost certain to produce the best chicken ever as well, either on whole birds or just boneless skinless breasts or whatever. The herby, spicy, lemony pop is the absolute perfect contrast to char and smoke.

I upgraded from American Domestic pork ribs yo Iberico Costilla Pork Ribs from Wild Fork because I wanted to experience authentic Mediterranean cuisine. I used Greek Spice Blend from Portland Salt Company and Pink Peppercorn seasoning from Spiceoliogy. Thank you so very much 🙏 for introducing me to the new style of BBQ. I have my second BBQ of Mediterranean ribs on the Napoleon Rogue 525 XXL right now and this time I bought enough Iberico Costilla Pork Ribs for Momma to have some lol 😋

All I have at home is a gas grill, I know I could use a smoke tray or some kind of device to establish smoke, but I don't. I live by the motto cook with what you got and season the best product you can. I have never made a rib that didn't get eaten, or a steak or burger or whatever. Use what you got and let your effort shine. I love your videos Malcolm and some day I'll get a smoker.

I'm definitely trying this.. and straight char grilling ribs is amazing. The store by my house sells ribs in 4 bone sections and that's how I always cook those.. not as tender but amazing bark and flavor.
