Very nice! In Greece lamb, goat and mutton chops are a delicacy pretty much like shown here. I really liked the ultrasound treatment and carefully made weed! 👍👍

Qui a Brescia, ma credo in tutto il nord, fino ad anni recenti si trovavano solo agnelli da latte o caprettini, quasi esclusivamente sotto Pasqua. Buoni sì ma dopo un po' stufavano. Per mangiare il castrato o la pecora bisognava fare un viaggio fino nell'Italia centrale o meridionale o avere conoscenti in montagna. Finalmente sono arrivati i macellai islamici pakistani che hanno non solo castrato e pecora, peraltro a bonissimo prezzo, ma pure le frattaglie delle quali vado assai ghiotto. Allah è il più grande, sia benedetto il suo nome! Se non fosse che diffido di tutte le religioni, specie quelle monoteistiche, mi sarei già convertito all'Islam. Guarda tu se dovevamo aspettare i musulmani per tornare a poter cucinare carni deliziose... Inoltre i macellai pakistani, diversamente da quel che accade in negozio italiano o al supermercato, ti tagliano la carne col suo grasso, fondamentale per dar sapore ad ogni cottura. Andrea Breda

Il tocco di classe, dopo tanta qualità e attenzione nelle materie prime e nel loro trattamento (la frollatura ad ultrasuoni), sono state le pinze di plastica Ikea per girare la carne sulla griglia. Filmato stupendo.

@@zarg8328 I’ve been studying and cooking for 20+ years including pro cooking school. I’ve seen a steer broken down muscle by muscle. I’ve visited small farms to learn more though they are wholly unrepresentative of our factory farmed food system. I enjoy farmers markets and learning from farmers. I’m well aware of where food comes from and what we’re willing to do to feed 8 billion people. All of it being besides the point because your response was a non sequitor to my comment. The masturbatory attitude toward a dead animal’s fat is repulsive.

they did not cook in the plastic bag, it was only to soften the meat with ultrasound, then the cooking was done on the grill

It's not cooked, it treated with ultrasounds before getting cooked as you can see once they take the meat of the bag. And by the way, even cooking in that material (which is not regular plastic) in sous vide it's a widespread technique around for decades that is used by many prime meat restaurants, your point of view doesn't have any scientific or technical sense. You are just criticizing something you don't know, and probably you are also used to eat quite poorly in terms of quality if you think vacuum cooking is not good.

Tipical internet ignoranus. Cooking may have been a poorly used word, non the less, ultrasound device does produce heat, bags are heated at least 50 °C. I personality don't want microplastic in my food which certainly enters on a microscopic lever while heating plastic bags. And if you think sous vide is the pinnacel of meat preparation well thats just your opinion. Maybe your baby jaws need the help of ultrasound but i would rather chew a little harder than eat plastic bags. I will just say new is not always better. Italia squisita is usually a channel that preserves tradition and US machine is not a necessary kitchen appliance. I'm sure people ate lamb ribs before ultrasound food processor was ever a thing.

E lo fate anche vedere , bel taglio in macellazione , sai le schegge e scheggine di osso che ci si ritrova nella carne ? Complimenti ! Il massimo le erbe spontanee , che erbe ? Cicoria , tarassaco , portulaca , crescione , rosolacce , ruccola , lattuga selvatica ? Boh ! E vai di massaggio ultrasonico, come per pulire i pezzi in officina . La cucina tradizionale regionale .
