Trust me when I saw the salting makes ALL the difference. When u salt both sides & let it sit, it draws out the excess moister & the bitterness. Night & day difference. I swear by it.

She over simplifies this dish, I make it with 5 cheeses and it takes me aprx 6 hours to cook this meal. It is delicious, can't taste the eggplant if done right. It is my most requested meal by my family and friends.
