Might wanna turn off the air-relight system as well after the respective engine has settled on idle if you intend to use it again. ;D

Good idea to make a Tutorial for one of the most important Emergency Procedures of the Mig-19 .. it's a pity that Razbam has not implemente yet the Failures Tab for the MiG-19, so you were forced to manually power off the engines rather than having a proper failure ... this also precludes from trying the emergency release of the landing gear and flaps :( ... let's hope that Razbam will implement the Failures Tab soon.

I know how to unlock each engine … but how do you operate the throttle of each engine separately when you want to throttle one and leave the other in idle ?

Depends on your setup. There are keybinds you could use to just push a button and smoothly change the throttle position, but that's gonna be a pain in the backside to manage properly. There are throttles that are split in 2 (the Warthog one for example as well as the Virpil throttle) so you can just bind two separate axes.
