My mom’s go-to sauce to cook ham (gammon) in is a can of crushed pineapple in juice, some brown sugar, and some mustard mixed together. I still do it that way and everyone who’s ever had it, loves it. Although it occurs to me you might not have canned (tinned?) pineapple in quite the same way as we do in the US.
