This kind of cut can be used for stir fry, too, but if you like tender meat, may be you don't like it. It's a little bit chewy and crunchy, though. Anyway, other kinds of meat and bones work well for Pho. It's flexible.

If it was snowing outside where I live I'd want to be indoors eating home made pho too😂It looks like a lot of work but we'll worth it. I made tteok bokki last night. I couldn't get the flat fish cake so used fish balls instead. It was really tasty. My husband loved it too.😋

I might have missed something… Did you save the spice soaking water at 11:58 ? What did you add at 18:38 ? Was it the saved spice soaking liquid ?

I didn't keep the spice soaking water, although it smelled so good. 18.38 was the blood water @12.34 ( I don't know how to call it 😁) that I got after soaking bones, ribs, meat in water overnight ( refrigerate overnight). This water helps enhance the flavor and make the broth clear.

@@lilynguyen88 OK, thank you. I think the albumin in the blood rises to the top as scum and traps other particles with it, and that helps clarify the broth. In French cooking you would use beaten egg white to get the same result.

I dont think your knife is sharp enough. It looks like sawing rather then cutting n slicing. I say this as someone who has done the same thing. I promise its like a revelation to use a good sharp knife. Life changing

Hi Donia, You're right. Both of them are not sharp😂 😂and getting worse, actually. I have spare ones, but I haven't changed yet. I've used those knives since I got married and moved into our home. I don't know. I feel like ending a long-term relationship 😁 I should change them for sure.

@lilynguyen88 you can just sharpen them. Get a sharpener n watch some videos first to find one you trust and that works easy enough.
