@Shari Lynn If you’re not going to eat the meat, you can use the cheapest cuts you can find along with some beef bones. (I say if you’re not going to eat it because I don’t know how tender it would be only pressure cooking for 30 mins… if it’s chewy and tough, it won’t be pleasant.) And if not, you can just start with beef broth instead.

Finally! An actual Pho recipe that doesn't break the bank by demanding high priced cuts of meat or take an entire day to make! This is a Pho I will actually make! You just earned a new Sub!

in around 2004, when I was 18, I ate at an asian restaurant that later closed down, I had this amazing dish with noodles, beef, and lots of other stuff in it, I loved it, and I didn't know what it was that I ate cause I didnt look at the menu again. I used to think back to that day, wishing I could figure out what that taste was.. until just a few days ago when I bought a bunch of different instant noodle packs from an asian import store, and there it was! The taste I've been trying to pinpoint for 20 years, granted, it was only some cheap instant ramen pack, brand Acecook, but the taste was instantly recognizable. Pho Bo is the name, and I'll never forget it now :D Even the instant packs are good, I'll definitely be getting it in restaurants again

My favorite Vietnamese pho shop of 12 years shut down and moved to the east coast so I had to learn and master pho broth. Fortunately for me there an amazing Asian super market here where I can get all the ingredients easily. After 6 months of trying various recipes and procedures I finally mastered a high quality broth. There's way more to it than one would think and attention to details is maximally important. I make 2 gallons at a time then freeze it in smaller 1 quart bags. I love the stuff.

There's no other pho shop around at all? The cooking time is not worth it, take too long to simmer the broths and buy all the ingredients. If you love to cook , I guess you enjoys it better.

@@rockhard9369 There are 5 pho shops in town but they all us a dry base to make the broth and short cut the ingredients. A large bowl of pho with everything is on average $17-20. I make my pho broth overnight. The aromatics go in the last hour and no fish sauce until serving time. There are reasons for this that I won't go into.

@@artkesh7452 Hi, Art. In answer to your question I would have to first say it would depend on you. I researched more than fifty recipes on making pho broth and then sorted them out into three categories: recipes that were basically the same, those that had slight differences, and hacks. Being a retired culinary arts teacher I tend to go for the authentic broth and most importantly of all, pay great attention to details and only use short cuts if they don't change anything adversely. What I shoot for is a clear mild beef broth with tones of pho spices. So, you have to decide how you like your broth and pick a recipe that looks like it will get you there. You can get a perfectly acceptable quick broth using an instant pot or pressure cooker if you don't mind a cloudy broth. Here's a rough but workable way to start your hunt for a recipe. Look at the picture and see if it looks like the pho you want to make then go from there. I make it in 2 gallon batches then freeze it in 1quart bags and I DON'T add the fish sauce until just before serving. It can sour the stock making it have an off flavor. A trick I learned and use often is adding a pound of chicken feet to the bone mixture because the collagen makes the stock a little more substantial. Thanks for the great recipe. I’ve made this 4 times now using the pressure cooker and it’s quick and super tasty with nice balance of flavours. My daughter has the flu at the moment but she still manages to slurp back a huge bowl. Fantastic comfort food. Thank you!!!

I will definitely try your version of Pho. We eat out at a local Vietnamese restaurant and several times a month and each visit cost at least $30 so if I can make decent Pho at home I’ll do it and save a bunch of money. Merry Christmas and a great new journey in the new year.

Pho is one of those things that I just cannot make at home that tastes just as good as the restaurant, no matter if I gather all the right ingredients or cook the broth for 12 hours. So we also have to buy it from the restaurant at least once every couple of weeks. So I am ready to try Flo’s recipe. I’ve never thought to use the instant pot! I really hope it’ll be a blast! Lol

Lan Lam from Americas test kitchen recently did a video on using water to get better browning for stocks & gravies: simmering ingredients in a small amount of water thus releasing all of the flavors into it, then turning that all into fond by reducing until the pan is dry. I wonder how that would work out for building a pho stock in addition to everything done here

One of my favorite vietnamese pho restaurants has their own pho restaurants in saigon using the same broth recipe. Their broth has the noticeable fish sauce. onion, ginger and white/black pepper taste on it. I've learned to just make an onion soup with the fish sauce, ginger, peppers and beef stock as a quick pho broth with mostly the same flavor on it.

I added some soya sauce and a cube of pho flavouring to a similar bunch of ingredients and served it to a Vietnamese friend who assumed it’d been stewing overnight! You can buy the cubes online or from Asian grocery stores, it really gives the broth that extra ooomph!

Yeah, the big pot certainly enough to feed 4 to 6 paxs. Even not eating it, i can see the broth is full of taste. I had tried the Korean Bulogi and my hubby loves it. Will try this too.
