Nice work! I had the #1 as a kid and it's long lost. Bought the #2 years ago and LOVE it. And I have big hands. Processed countless squirrels with it. Just had it at the cottage recently. Used it to clean fish, kitchen food prep, even battoned it to produce kindling for fires. A light touch-up with a steel and life is good.

They so make good knives. I particularly like Grohmann Mini Skinner kzbin.info/www/bejne/pnemf6ilbtSMhbc - it has a smaller blade which limits its general use but I really like using it for smaller tasks. Thanks for posting!

I have a #1 and love it. A few years ago, I added the Bird and Trout to accompany me fishing and bird hunting. Great comment, "it is not a survival knife." From the mountains of Arizona.

Interesting and beautiful knife. Looks like it makes good work of a nice fish. Have you ever used nessmuk style knives? I think they originate in Canada as well. I find it's easier to gut the fish and leave the head attached to the fish. Make a slit with the knife all the way down until you hit the spine behind the cheek and then turn your knife towards the tail. You can run your knife along it's spine and make your fillet. With head still on, it gives you something to grab onto when you run your knife along the spine towards the tail. You can hug the spine and hear it tick-tick-tick as your knife runs along it. It's much quicker by the looks of it and turns out a really nice fillet. Tight lines!

Nice looking fish.. Good job filleting. Being from Nova Scotia I am somewhat obligated to own at least one Grohmann... So, I have four :) I bought my first, a No 1 more than 40 years ago. I also have the No 4 and recently obtained a No 3 (second).. I also have a small slip joint folder by Grohmann. Nice knives if a bit expensive. You may be interested in a relatively new Nova Scotia knife maker "Triple X Knives"

These style of knife is great for large and small game skinning though I think that a filet knife works much better for fish due to the flexibility and thinness of the blade. I just found your channel, love the videos. I have used one of these that I inherited from my grandfather for years to skin big game. I love it, cold steel makes a budget friendly version of it that is equal is quality, called the canadian belt knife.

Not designed for filleting fish, you still did OK though. Needs a good sharpening for sure. I owned one of their hunting knives and found it would not hold an edge, blade was nicely designed for gutting and skinning deer. Bought a chef knife pairing knife and boning knife and they lasted ten years of commercial kitchen use, much easier to sharpen. Hunting knife is now a made in Solingin hunters pal, a very good quality knife.

No... A bird and trout knife IS a survival knife! Bird, fish, squirrel, whatever you need to gut or skin is survival for sure. My favorite knives are much like this, all belly. for me it makes slicing or skinning very easy compared to a flat blade with a small belly near the tip. I will have to try this one once I have a bit of money. Looks perfect for me.

I agree, the knife you have at the time is a "survival" knife but this knife would not hold up well to heavy tasks. Its not designed for it and there are better options for a more general purpose knife 👍

Beauty Trout man!! 👍 The dog was like "mmmm what's in that swim bladder!?!?" Couple tips, that you may already know... and apologies if so, don't cut that tail off. Use it as a handle and cut from the tail towards where the head was. Also... that size of trout is right where I may decide to fillet. I typically just bread the fish (headless and gutted) in some fish batter (available everywhere... I like Fish Crisp) and fry it up in a pan until done. Then I run the knife along the spine and you can lift off one side of the fish carefully and then grab the tail and literally lift the entire skeleton out. Zero bones!! My sweetheart thinks I'm a mountain man when I pull it off ;) Anyway, just ordered my first grohmann(s) a trout and bird with a flat grind (Stainless) with stag handles and a Standard skinner with regular saber grind and micarta handles... also in stainless (I live 100 yards from the ocean) I hunt grouse and deer and bear and fish trout and salmon any chance I get! So I'm sure I'll wind up with a #1 and a #4 and and and .... Cheers brother and thanks for the posts!!

I don’t fillet trout I stop after removing the entrails, head, and tail. Cut into steaks you get a nice amount of meat and the skin tastes good on it

I do something similar by gutting - top and tail the fish and bake in the over. Easy to remove the bones once cooked. Thanks for the great tip!
