I make a delicious creamy salad dressing with French tarragon! I would love to share it with you all. I learned it in a French restaurant called La Bonne Bouffe in San Diego, California. Take some mayonnaise and whisk in red wine vinegar until it takes on a pink color. Then add lots of dry tarragon with salt and pepper to your taste. Add a splash of water if you like a thinner bodied dressing. Enjoy!

I think I have some mexican tarragon. It's up in the corner of the property that I hardly see. Hot and dry with lots of weeds and it's pretty happy. Flowers after the hot summer heat. And spreads all by itself.
