I keep the shoulder whole, sear it in the grill and then put it in a foil pan covered and cook it low and slow with a dry rub. Very very good.

Theres another gland in the front shoulder that should be removed before cooking

Great video! I’ve been cleaning deer for years but now that we have to debone deer to bring to FL from other states, this will help tremendously while the deer is still hanging! Saves double the work. Thank you for taking the time to do this video!

Ive watched a lot of videos on processing meat and gutting critters , along with doing my own deer and hogs for years. I watch other peoples videos to see different techniques and pick up tips. Your method for deboning the rear quarters while still hanging on the gambrel is NOT as common, but for those watching take note! That looks like a really good alternative that I plan to try this year. Thanks for the detailed videos on this.IVe seen a similar method done by butchers that were processing elk for customers.

Good video. I've only butchered a few deer but cut beef and pork in a grocery store for years. A lot of difference in butchering for personal use and merchandising for profit. The small piece on the backside of the spine is the most tender muscle. Filet mignon on beef. Of course deer is much smaller so a lot of the cuts on beef are not really possible on deer.

I save the bones (leg bones ) to make stew/soup. It gives it a deeper flavor.

It appears that you may have skipped a little bit after cutting out the top round. It cuts to what looks like the bottom round and eye of round peeled away. This is a great video for beginners but that bottom round makes great steaks, I think a lot of folks would appreciate the 30 seconds or so of cuts that were missed there.

I'm asking a question what is the purpose of putting the meat in a bag vs putting the meat straight on ice?

Water from ice can saturate the meat and decrease the quality.

It appears that in less than 5 hours of posting my opinion and the techniques and tools I use in processing my deer harvest. Someone felt it was in their best interest to employ censorship and remove my thoughts. Let me suggest that you therefore close the comment section on any future videos you care to inflict on the world. Don't forget that censorship is illegal and plain rude in general, considering I only expressed my opinion to a video I said was good.

you gotta do better skinning it. You left a ton of hair on the meat. My 5 year old leaves cleaner meat than you
