Hi Chef Leo, a v big thank you for sharing yr recipes with me. You also willingly shared all the methods and tips to make a dish taste great and authentic. I tried your method of caramelising the sauce but with chicken and potatoes and it was terrifically delicious. I have never heard of this method of frying the sauce before you add it to braise your meat. Mine was the old way that many housewife did. My family really enjoyed the chicken done this way. It was so fragrant. I will never do the old way ever again.
