We've worked with guest chef, Ixta Belfrage, co-author of the bestselling book FLAVOUR with Yotam Ottolenghi, to bring you one of her favourite recipes from her new cook book Mezcla; Chiles Rellenos with Salsa Roja Risotto. Traditionally a Mexican dish of cheese stuffed roasted peppers, Ixta has added her own flare by serving them on top of a not-so-traditional salsa risotto. It's a flavour-packed plate combining influences from Mexican, Brazilian and Italian food - the 3 cuisines she grew up eating and obsession over, and are the basis of her fusion style cooking (Mezcla means 'mixture' in Spanish).
