Finally made this because my plaintain finally ripened fully 😂 I cut my recipe down to 1/2 for a smaller portion and now am questioning the foolishness of my ways… what was I thinking? This was so incredibly good and once you have the recipe down the first time, I can see how easy it will be to recreate again. I couldn’t find scotch bonnet so, I opted for a Habenero instead - worked just fine. This was one of those recipes where what you see is what you get when you make your own version. I flipped that plate over and voila! It looked the same! This will be revisited often and maybe, just maybe, some additions thrown in (I’m thinking vegan chorizo the entire time I ate my two slices would be nice). Thank you for sharing this recipe - I have been sharing it too!!

As a Puerto Rican this reminds me a bit of pastelon :) but i think it might be even better yet. I love the feta addition 🎉😊
