Guga, I have watched hundreds of your videos and love them all between your multiple channels. However, the star for me as a home cook is your side dishes. There is no way for us to reference them in your videos as they are always tied to an experiment or something like that. It would be awesome if there was a way for us to find your amazing side dishes independently of the steak experiments Etc. for great pepperoni chips, all you need is some paper towel, pepperoni, and a microwave. you layer the pepperoni and paper towels on a plate, then typically microwae for about 3 minutes. comes out great everytime!

Oven baked pepperoni crisps are so good as a snack. I wasn't sure about it initially, but surprisingly it just tasted like fried bacon with some mild spice. These steaks look wonderful and crispy!

for future reference, if you actually want crispy pepperoni chips as a snack- use an air fryer or convection oven and keep an eye on them. toss in a paper towel lined bowl when they’re done to get some of the grease off. super easy and tasty!

Sometimes I smoke chuck roast. I always trim the fat out, thin slice it and lay it on top of the roast to render and baste it. The fat strips always end up nice and crispy and smoky like bacon. It's really good.

We make pepperoni chips in the air fryer. Lower temps keep them from burning, and they turn crispy without darkening too much.

Guga! Please try freeze drying the peperoni, then blending it to make peperoni dust and then use that for the steak crust! Would be super interesting to see if that would yield the best of both worlds, crunch and flavor combined. Also, going with the above theme: steak vs peperoni dust compound butter maybe?
